Coconut Milk Whipped Cream

Yields 8 servings

Ingredients 

  • 1 can (13.5 ounces) coconut milk, full fat
  • 1 teaspoon vanilla extract
  • ¼ teaspoon lemon extract
  • 4 drops liquid stevia to taste

Instructions 

  1. The night before you make Coconut Milk Whipped Cream, place the coconut milk in the refrigerator. When chilled, it will more easily turn into whipped cream.
  2. About 15 minutes before making this recipe, set the beaters from your hand mixer and a glass bowl in the freezer. Leave them there for 15 minutes.
  3. In a large mixing bowl, add your coconut milk. Begin beating it with the hand mixer. Beat on medium speed for one minute. Then add the extracts and stevia. Beat on high speed for another 3 minutes or until you get nice peaks in the whipped cream.
  4. Top your keto desserts and Paleo desserts with this whipped cream!

  1. You can make unflavored coconut milk whipped cream. Simply leave off the extracts and the stevia.
