Chocolate Dairy Free Low Carb Ice Cream Recipe

Yields 4-5 servings

Ingredients

2 cups coconut milk
¾ cup erythritol powder
½ cup unsweetened raw cacao powder
1 tablespoon filtered water
2 large egg yolks
2 teaspoons gelatin powder
1-1/2 ounces MCT oil
Himalayan salt, one pinch
½ cup dark chocolate, chopped
10 drops Stevia extract (distilled water extract)

Instructions

  1. In a large sauce pan, add the coconut milk, reserving 1/3 cup to be used later. Add the erythritol, stevia, and pinch of salt. Stir until completely mixed.
  2. Keep stirring the pot over a medium high heat.
  3. Add the cacao. Mix. Continue heating until a gentle boil starts. Then turn the heat down to a low flame.
  4. Take your remaining coconut milk and add it to a small bowl along with the egg yolks. Mix thoroughly, breaking up the yolks.
  5. Then take about ½ cup of the hot coconut milk mixture and add it to the egg yolk-coconut milk mix. Keep stirring it to prevent curdling.
  6. Merge the new mixture into the sauce pan. Heat on low and stir. Allow to thicken to custard consistency. Remove from heat.
  7. In a small cup, mix gelatin with water. Then add to the hot mixture.
  8. Quickly cool the entire chocolate ice cream mix.
  9. Add the MCT oil. Stir to mix. Allow ice cream to cool completely.
  10. Pour into an ice cream maker. If you don’t have an ice cream maker, pour into a pyrex dish and freeze for about 1 hour. (less time if using an ice cream maker)
  11. When frozen, break up ice cream into chunks. Serve chunks in dessert bowl or dessert glass. Add chocolate pieces if desired. Refreeze if necessary.

How to Alter This Recipe for New Taste Sugar-Free Desserts Variations

  1. There’s nothing better than chocolate and peppermint together. Add 1 teaspoon peppermint extract to the recipe ingredients.
  2. Add cookie crumbs and pieces along with nuts to the finished ice cream.

  4. Sprinkle chili powder on top of the ice cream before eating.
