  • 1 teaspoon vanilla extract
  • ¼ teaspoon lemon extract

Instructions

  1. The night before you make Coconut Milk Whipped Cream, place the coconut milk in the refrigerator. When chilled, it will more easily turn into whipped cream.
  2. About 15 minutes before making this recipe, set the beaters from your hand mixer and a glass bowl in the freezer. Leave them there for 15 minutes.
  3. In a large mixing bowl, add your coconut milk. Begin beating it with the hand mixer. Beat on medium speed for one minute. Then add the extracts and stevia. Beat on high speed for another 3 minutes or until you get nice peaks in the whipped cream.
  4. Top your keto desserts and Paleo desserts with this whipped cream!

How to Vary Low Carb Frozen Dessert Recipes

  1. You can make unflavored coconut milk whipped cream. Simply leave off the extracts and the stevia.
  2. You can also experiment with leaving off the lemon extract from the ingredient list. In this case, it would simply be vanilla flavored Coconut Milk Whipped Cream.
  3. You can get bold when making your keto desserts that need whipped cream and add almond extract to match the almond ingredient in the cake, cupcake, or ice cream.
  4. You could try adding raspberry or orange extract instead of the vanilla extract and the lemon extract. If you’re doing this, start out with the same amount of extract as in the original recipe, and then make your alterations from there.
  5. You can add whipped cream to virtually any paleo dessert or even enjoy whipped cream as your dessert. Or use it for dipping. It’s great for the Munchie bites recipes as a side to dip the sweet treats in!
