Almond butter has several uses in meals. Yields 1 pan brownies

Ingredients 

  • 1-1/2 cups almond butter
  • ¾ cup erythritol powder
  • 5 large eggs

  • ½ cup unsweetened shredded coconut
  • 1 teaspoon grain free baking powder
  • 1 teaspoon Himalayan or celtic salt

Instructions 

  1. Leave almond butter at rom temperature for a few hours before starting this recipe. Then shake the almond butter for 30 seconds to homogenize the fat with the almonds, which tends to separate.
  2. Next measure out the amount of almond butter you need, placing it in a large mixing bowl.
  3. Add the rest of the ingredients to the mixing bowl.
  4. Mix with a hand mixer for 4 minutes.
  5. Pour the mixture into a 9-inch by 9 inch baking pan, greased with coconut oil.
  6. Bake for 20-30 minutes at 350F. Test for appropriate amount of doneness. If you want more fudgy brownies, the toothpick will come out with batter on it. If you want more cakey brownies, the toothpick will come out clean. You determine the type of brownies; the cooking time is enough for both types of brownies to be sufficiently cooked.
  7. Remove from oven when done. Allow to cool for at least an hour before serving. Slice into appropriate serving sizes of these sugar free desserts.
