Yield: 3 dozen sugar free dessert cookies

Ingredients:

  • 3 cups almond flour
  • 1/3 cup butter, melted
  • 1-1/2 cups erythritol
  • 2 medium sized eggs
  • 1-1/2 teaspoons vanilla extract
  • 1 tablespoon salt
  • 1 tablespoon ground ginger
  • 1/3 teaspoon ground nutmeg
  • 1/3 teaspoon ground cloves
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat oven to 350F.
  2. In a large bowl, mix together the flour, erythritol, salt, and spices.
  3. In a small bowl, mix together the eggs, butter, and vanilla extract.
  4. Take the small bowl and add its ingredients to the large bowl of dry ingredients. Using a hand mixer, beat until all ingredients are thoroughly mixed. You can expect the batter to be crumbly and somewhat stiff.
  5. Take out a tablespoon of dough and place it on a lined baking sheet. Form the cookie into a round shape.
  6. Bake at 350F for only 10-12 minutes depending on how hot your oven gets. They should be lightly browned.

  • 1/4 teaspoon salt
  • 1/4 cup butter softened

Pie Filling

  • ½ cup fresh key lime juice
  • 1 envelope unflavored gelatin
  • 2 ripe avocadoes
  • 4 ounces light cream cheese softened
  • 1/4 cup plain, full fat Greek yogurt
  • 1 cup heavy cream
  • Key lime zest (from one or two limes)
  • 1/2 teaspoon stevia extract
  • 1/2 teaspoon lemon stevia
  • optional topping: 2 cups heavy whipped cream

Instructions

  1. Pulse crust ingredients in a food processor to mix
  2. Press into 9 x 13 pan and set aside
  3. Boil gelatin in lime juice, then lower heat and slowly dissolve.
  4. Cool gelatin mixture 2 minutes.
  5. Beat avocadoes and cream cheese until combined
  6. Add the rest of the ingredients and beat on high
  7. Pour mixture over crust
  8. Refrigerate until set and enjoy
  9. Top with whipped cream if you like!

INGREDIENTS

Pie Crust

  • 2 cups almond flour
  • 6 tablespoons butter, melted

  • 1 teaspoon ground cinnamon

Pie Filling

  • 3 cups thinly tart apples, peeled and cored
  • 1/4 cup butter
  • 1/4 cup erythritol sweetener
  • 1/2 tsp lemon juice
  • 1/2 tsp ground cinnamon

For the Topping:

  • 1-1/2 tablespoons erythritol sweetener
  • 1-1/4 teaspoons ground cinnamon

INSTRUCTIONS

Preheat the oven to 375 degrees

  1. Combine the melted butter and dry ingredients.
  2. Stir with a fork until crumbly.
  3. Press the crust dough firmly into the bottom of a 10″ tart pan.
  4. Pre-bake crust 5 min.

Pie filling/Tart filling

Instructions: 

  1. Combine the sliced apples and lemon juice in a medium bowl.
  2. Lay the sliced apples evenly across the bottom of the crust in a circular (or other) pattern.
  3. Press the apples down lightly when done.
  4. Combine the butter, cinnamon and sweetener in a small bowl and microwave for 1 minute. Whisk until smooth and brush or spoon evenly over the top of the apples.
  5. Bake the tart for 30 minutes at 375 degrees (F).
  6. Remove the tart and gently press the apples down flat with spoon.
  7. Reduce the heat to 350 degrees (F) and bake another 20 minutes.
  8. Remove from the oven.

 For the Topping:

Instructions 

  1. Combine the cinnamon and sweetener.
  2. Sprinkle over the top of the tart.
  3. Serve warm or chilled.
