When you read through the ingredients of this recipe, you might be a bit surprised that one of the ingredients is beef gelatin. It’s in a few of my other low carb paleo dessert recipes, along with keto bomb dessert recipes. Sometimes I even add it to my sugar free ice cream recipe, which is a low carb ice cream.

Of course, I do realize that if you’re vegan, you aren’t going to like the addition of the gelation – but you can leave it out. I figured out a while back that gelatin is a lot similar to chia seeds and tapioca. It swells when it starts absorbing water that is nearby it. And that’s a good trait to have when you’re looking for a way to hold together the batters of different sugar free desserts recipes.

Gelatin should really be considered a superfood. It contains all the right substances for the joints, cartilage and bone to rebuild themselves. Whenever you have an injury, the tissues that were injured have to be rebuilt. And that’s where gelatin is pretty handy. When you get marrow bones from the grocery store and make soup out of them, you’ll see gelatin in the soup liquid.

In this recipe for sugar free desserts – the coconut flour soft chocolate chip cookies, there is a little bit of gelatin. It’s probably not enough to rebuild your joints because you need a higher dose for that – but it’s a small start.

Coconut Flour Soft Chocolate Chip Cookies: The Best Among our Low Carb Paleo Dessert Recipes

–Yields 2 dozen cookies

Ingredients 

  • 1-1/3 cups coconut flour
  • 12 tablespoons butter (1-1/2 stick)
  • 2 large eggs
  • 3 tablespoons cream cheese
  • ¼ cup whipping cream
  • ¾ cup erythritol
  • 10 drops stevia liquid
  • 2 tablespoons beef gelatin powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • ½ teaspoon chocolate extract
  • Pinch of sea salt
  • ½ cup dark chocolate chips
  • 2 teaspoons baking powder

Instructions 

  1. Preheat oven to 350F.
  2. Melt the butter and cream cheese in a double boiler or in your microwave. It only takes about 20 seconds in the microwave.
  3. Transfer the butter / cream cheese mixture to a large bowl.
  4. Add eggs, whipping cream, stevia liquid, vanilla extract, chocolate extract and lemon extract. Stir to combine.
  5. In a medium-sized bowl, mix your coconut flour, erythritol, gelatin, baking powder, and the sea salt.
  6. Add about ½ cup of the dry ingredients to the wet. Then mix thoroughly.
  7. Add the remaining amount of the dry ingredients and mix thoroughly. Your batter is shaping up nicely by now.
  8. Next fold in half of the chocolate chips.
  9. Line your baking sheet with parchment paper.
  10. Scoop out about 1-1/2 tablespoons batter per cookie and place the batter on the baking sheet. The cookies won’t spread out so you can line them up close to each other.
  11. Press the remaining chocolate chips into each cookie.
  12. Bake at 350F until done, about 15 minutes.

Remove cookies from oven and cool on a cooling rack.

Once you know the basics, you can modify the sugar free desserts recipes you make to suit your sweet tooth. The same thing is true for sugar free ice cream and low carb ice cream.

Common Sweeteners Used for Paleo Desserts

  1. Stevia

Since Stevia is a plant with sweet medicinal compounds in its leaves that have no calories whatsoever, it’s always okay to use it in any of your recipes, even those of sugar free ice cream.

Stevia is a rainforest herb found in Peru and some other tropical rainforests of the world. Its sweetness is up to 300 times sweeter than sugar, and that’s sweet enough for any paleo desserts you’re making.

You can purchase it in several different forms. One form is the most natural form and it’s where the Stevia leaf was dehydrated and then pulverized into a powder.

There’s also a liquid form available but buyer beware because sometimes the manufacturers will add no-no keto foods or substances to the liquid to blow your keto diet. Who wants that? Look for added sugar, dextrose or any dextrin on the label. That means maltodextrin, too.

Beware also of any artificial sweeteners such as sucralose or even aspartame. How companies rationalize the addition of these is beyond the scope of this article, but whatever the reason, it’s got an agenda behind it that you don’t need for your keto or Paleo diet – or your sugar free desserts.

The effect of stevia on the body from a physiological standpoint is to lower the blood sugar levels. You won’t need much in a recipe so use it sparingly.

  1. Erythritol 

This is a sugar alcohol commonly used in sugar free desserts, including low carb ice cream recipes. Like Stevia, you won’t get any calories added to your low carb desserts recipes that have erythritol added to them.

This sugar substitute won’t affect your blood sugar levels either. And here’s another bonus – most of the erythritol is going to be absorbed before it ever gets to your large intestine.

You won’t want to use a lot of this type of sugar substitute because there is a point where your stomach can feel a little strange if you eat too much of it. However, that critical point is around 1 gram erythritol per every 2.2 pounds (a kilogram) you weigh.

If you weigh 150 pounds, you’re at 68 kg so you need less than 68 grams erythritol to stay away from stomach cramping.  Still, this is easy to do and most people don’t have a problem with it, even when it’s holiday time and they seem to be gorging on keto desserts more than ever.
