INGREDIENTS

 Cake 

  • 1 cup erythritol
  • 3/4 cup Butter (softened)
  • 8 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • 3 cups almond flour
  • 1/2 cup Coconut flour
  • 1 1/2 tablespoon Gluten-free baking powder

Cream Cheese Frosting

  • 32 oz Cream cheese, softened
  • 1/3 cup butter, softened
  • 2/3 cup Powdered erythritol (adjust to taste; regular granulated *not* recommended)
  • 1 teaspoon Vanilla extract 

Cream cheese frosting

  • 32 oz Cream cheese (softened)
  • 1/3 cup grass fed btter (softened)
  • 2/3 cup powdered erythritol (adjust to taste; regular granulated *not* recommended)
  • 1 teaspoon organic vanilla extract

 Directions

 For the cake

  1. Preheat oven to 350 degrees F and line a 9” springform pan with parchment paper.
  2. Beat erythritol and butter until creamy and fluffy.
  3. Add in the eggs, one at a time, then almond milk and vanilla.
  4. Add in dry ingredients and beat until creamy and pourable.
  5. Pour 1/3 of the batter into your lined pan and bang down to make even.
  6. Bake 18 to 22 minutes. Repeat to make three layers.

Frosting

  1. Beat together cream cheese, butter, erythritol and vanilla until smooth.

Assembly

    Let all layers cool completely to prevent crumbling

  1. Frost between the layers and stack, topping the top layer with frosting and lots of chopped pecans.
  2. Serve and enjoy!

I love finding out about the latest research on spices – and ginger is quite amazing. The more I find out about it, the more I want to include it in my Paleo desserts recipes (keto desserts), which are always sugar free desserts made with healthy sweeteners like xylitol.

And I notice a difference. Any area of my body that may be inflamed – maybe because I worked it out too hard at the gym or moved it in a weird way – will seem better when I consume ginger. In fact, often my wife will make a cup of ginger tea for me and have it waiting when I come home from work.

According to the University of Maryland Medical Center, ginger has been used to help digestion for more than 2000 years. It’s been used for colic, diarrhea, and even heart conditions. Women may know that ginger can make the pain of a menstrual period a lot less and may depend on it for feeling better during that time of the month.

Pregnant women who have severe vomiting can even benefit from ginger, reports the U of Maryland doctors. The women who consumed 1gram ginger daily for four days straight had a lot more vomiting relief than those who were stuck taking the placebo. In another study, the women who took the ginger had less nausea and did not vomit at all compared to those who got the placebo.

Ginger also works for those who are on chemotherapy and have nausea and vomiting. Hmmm . . .  so ginger cookies could conceivably help quite a few different types of people. Isn’t that exciting?

Coconut Flour Soft Ginger Cookies: A Favorite Among Many Paleo Desserts

Check out our fairly popular low carb paleo dessert recipes that include these soft ginger cookies. We’ll teach you how to make them along with many other types of paleo desserts. This recipe yields about 2 dozen cookies.

Ingredients 

  • 1-1/3 cups coconut flour
  • 12 tablespoons butter (1-1/2 stick)
  • 2 large eggs
  • 3 tablespoons cream cheese
  • ¼ cup heavy whipping cream
  • ¾ cup erythritol
  • 2 teaspoons ground ginger
  • 10 drops stevia liquid
  • 2 tablespoons beef gelatin powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • Pinch of sea salt
  • 2 teaspoons baking powder

Instructions 

  1. Preheat oven to 350F.
  2. Melt the butter and cream cheese in a double boiler or in your microwave. It only takes about 20 seconds in the microwave.
  3. Transfer the butter / cream cheese mixture to a large bowl.
  4. Add eggs, whipping cream, stevia liquid, vanilla extract, and lemon extract. Stir to combine.
  5. In a medium-sized bowl, mix your coconut flour, erythritol, ground ginger, gelatin, baking powder, and the sea salt.
  6. Add about ½ cup of the dry ingredients to the wet. Then mix thoroughly.
  7. Add the remaining amount of the dry ingredients and mix thoroughly. Your batter is shaping up nicely to look like cookie batter by now.
  8. Line your baking sheet with parchment paper.
  9. Scoop out about 1-1/2 tablespoons batter per cookie and place the batter on the baking sheet. The cookies won’t spread out so you can line them up close to each other.
  10. Bake at 350F until done, about 15 minutes.
  11. Remove cookies from oven and cool on a cooling rack.
