Paleo Desserts Recipe Collection: To-Die-For Fudgy Nut Brownies

Yields 1 pan brownies (sugar free desserts)

Ingredients 

  • ½ cup almond flour
  • 1 stick of butter (8 tablespoons)
  • 6 ounces of your favorite dark chocolate bar
  • 4 large eggs
  • ¾ cup erythritol
  • 1 teaspoon kelp granules (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder or cream of tartar
  • 2 ounces walnuts or almonds, ground
  • 1 pinch Himalayan salt

Instructions 

  1. Preheat oven to 350.
  2. On the stove in a large sauce pan, slowly melt the chocolate and the butter. Mix thoroughly to remove lumps. Then turn off the burner and set the pan aside to cool.
  3. In a large mixing bowl, add the eggs, vanilla extract, erythritol and salt. Mix with a hand mixer for three minutes.
  4. In a medium sized mixing bowl, mix the almond flour with the banking powder. If you’re adding kelp granules, add it now. The kelp will provide extra minerals for all those who eat the brownies.
  5. Then add the almond flour mixture into the chocolate sauce pan that has cooled to room temperature.
  6. Add the egg mixture as well and stir to mix.
  7. Pour the mixture into a parchment-lined 9-inch by 9 inch baking pan.
  8. Take the ground walnuts and sprinkle them on top of the brownie pan.
  9. Bake at 350 for about 25 minutes. Test for doneness. If the brownies are more cakelike, a toothpick test will come out clean. If the brownies are more fudgy, then the toothpick test will show chocolate on the toothpick.
  10. After baking time is finished, remove the whole large brownie from the baking pan. Place on a cooling rack.
  11. Cut into small brownies and serve with chocolate mint sugar free ice cream for an extra endorphin surge.

  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat oven to 350F.
  2. In a large bowl, mix together the flour, erythritol, salt, and spices.
  3. In a small bowl, mix together the eggs, butter, and vanilla extract.
  4. Take the small bowl and add its ingredients to the large bowl of dry ingredients. Using a hand mixer, beat until all ingredients are thoroughly mixed. You can expect the batter to be crumbly and somewhat stiff.
  5. Take out a tablespoon of dough and place it on a lined baking sheet. Form the cookie into a round shape.
  6. Bake at 350F for only 10-12 minutes depending on how hot your oven gets. They should be lightly browned.
