Ingredients 

  • ¼ pound butter (8 tablespoons or 4 ounces or ½ cup)
  • ½ cup erythritol
  • 1 cup almonds
  • 1/2 cup peanuts
  • ½ teaspoon vanilla extract
  • Pinch of salt unless peanuts are already salted

Instructions

  1. Melt the butter either in a small saucepan. Use a low flame so you don’t burn it.
  2. Then add the erythritol and stir. Next turn the flame up to medium high. Stir constantly until the mixture hits boiling point.
  3. Get out your candy thermometer.
  4. Boil the butter-erythritol mixture on medium heat for about 10 minutes. You’re looking for the mixture to caramelize and turn a brownish color. You may have to turn the heat down so it doesn’t burn. You want the temperature of the mixture around 300F.
  5. Next take the pan off the burner and stir in the nuts.
  6. Add the vanilla extract.
  7. Line a baking sheet with parchment paper. Then use an olive oil spray or other oil spray to spray the parchment paper.
  8. Pour the nut brittle onto the baking sheet.
  9. Let it cool.
  10. When fully cooled, break into pieces.
