Ingredients 

Instructions

  1. Put the milk, cream, erythritol and cinnamon into a saucepan and heat over low—then medium heat.
  2. Add the unsweetened chocolate, almond and other ingredients.
  3. Blend with an immersion blender to make frothy.
  4. Top with whipped cream and more cinnamon.
  5. Enjoy!

Low Carb Desserts Favorite: Keto Vanilla Cappuccino (1 serving)

Ingredients

  • 1-cup unsweetened coconut milk
  • 1 tbsp. unsweetened cocoa powder

Keto Cinnamon and Almond Butter Smoothie

 INGREDIENTS

  • 1-1/2 cups unsweetened nut milk
  • 2 Tbsp no sugar almond butter
  • ½ tsp cinnamon
  • 15 drops liquid stevia or xylitol to taste
  • 1/8 tsp almond extract
  • Dash of sea salt
  • 6-8 ice cubes

Instructions:

Blend until smooth!

Bulletproof Chai Tea Latte

1 serving, 6 net carbs, 250 calories.

Ingredients

  • Spiced chai tea
  • 1 tablespoon MCT oil
  • 1 tablespoon heavy cream
  • 1 tablespoon grass fed butter unsalted
  • Xylitol, erythritol, or stevia to taste

Instructions

  1. Brew the tea as per the instructions.
  2. Blend the brewed tea and all the ingredients in a blender for a couple of minutes

White Chocolate Peppermint Mocha

Ingredients

  • 1-½ cups unsweetened almond milk
  • 2 shots espresso
  • 2 tablespoons powdered erythritol
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa butter
  • 2 scoops sugar free cocoa
  • Full fat whipped cream for topping
  • Stevia or xylitol peppermint drops

Instructions

  1. Heat the almond milk until steamy but not scorched. Now, add in the cocoa butter nibs, espresso, erythritol, and vanilla and stir until the cocoa butter is completely dissolved.
  2. Take off the heat and let sit and cool just briefly. Now, add the keto-friendly cocoa and whisk until fully mixed. Now, add your peppermint drops, some full fat whipped cream, dark chocolate shavings, if desired, and enjoy!

If they love tapioca pudding, the chances are great they will love this chocolate mint chia pudding and add it to their favorite keto desserts (Paleo desserts, too) recipes list.

Why Make the Chia Seed Pudding Paleo Desserts Anyway?

Chia seeds are one of the superfoods you’ll hear about. They’re foods from the Aztecs and Mayans that can be counted on to provide energy and calories that will sustain you during the day.

Chia seeds will give you good amounts of minerals if you eat an ounce of them. That’s equal to about 2 tablespoons. In fact, you can expect to get about 30% of your day’s requirement of manganese from chia seeds. This is important because the glyphoside chemicals sprayed on plants ends up depleting your body’s manganese levels.

Chia seeds aren’t especially high in calcium but the ounce that you eat of them can give you a good 18% of the daily requirement unless you are breast-feeding or pregnant. Then you need more calcium.

Just one ounce of chia seeds gives you 11 grams fiber. That’s pretty good considering about 30 grams is considered a great fiber intake.

Chia seeds provide a good source of fat for your keto diet. Two tablespoons of them provide 9 grams fat.

They don’t contain any gluten, dairy, pork, wheat, or sugar. That’s why they are so perfect as an ingredient in sugar free desserts, keto desserts, Paleo desserts and even in sugar free ice cream recipes.

Chocolate Mint Chia Seed Pudding

Yield: 4 servings

 Ingredients

2 cups coconut milk, full fat
4 T unsweetened cocoa powder
2/3 cup chia seeds
2 tablespoons fresh mint leaves
¼ cup shredded coconut, unsweetened

Instructions 

  1. In a medium sized bowl, add the chia seeds and a cup of water. Let soak for a few hours, but preferably overnight. The seeds will swell up and look similar to tapioca pearls but form more of a gel.
  2. In your blender, blend the mint leaves with the coconut milk and cocoa powder.
  3. Pour into a large bowl and add the gelled chia seeds. Mix thoroughly.
  4. Cover the bowl with plastic wrap and then place in the refrigerator overnight.
  5. Then take out the bowl in the morning and blend it in a blender to smooth out the consistency. Dish out in small pudding bowls.
  6. Place a mint leaf on the top of each bowl. Sprinkle with shredded coconut.
