According to the University of Maryland Medical Center, ginger has been used to help digestion for more than 2000 years. It’s been used for colic, diarrhea, and even heart conditions. Women may know that ginger can make the pain of a menstrual period a lot less and may depend on it for feeling better during that time of the month.

Ingredients 

  • 1-1/3 cups coconut flour
  • 12 tablespoons butter (1-1/2 stick)
  • 2 large eggs
  • 3 tablespoons cream cheese
  • ¼ cup heavy whipping cream
  • ¾ cup erythritol
  • 2 teaspoons ground ginger
  • 10 drops stevia liquid
  • 2 tablespoons beef gelatin powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • Pinch of sea salt
  • 2 teaspoons baking powder

Instructions 

  1. Preheat oven to 350F.
  2. Melt the butter and cream cheese in a double boiler or in your microwave. It only takes about 20 seconds in the microwave.
  3. Transfer the butter / cream cheese mixture to a large bowl.
  4. Add eggs, whipping cream, stevia liquid, vanilla extract, and lemon extract. Stir to combine.
  5. In a medium-sized bowl, mix your coconut flour, erythritol, ground ginger, gelatin, baking powder, and the sea salt.
  6. Add about ½ cup of the dry ingredients to the wet. Then mix thoroughly.
  7. Add the remaining amount of the dry ingredients and mix thoroughly. Your batter is shaping up nicely to look like cookie batter by now.
  8. Line your baking sheet with parchment paper.
  9. Scoop out about 1-1/2 tablespoons batter per cookie and place the batter on the baking sheet. The cookies won’t spread out so you can line them up close to each other.
  10. Bake at 350F until done, about 15 minutes.
  11. Remove cookies from oven and cool on a cooling rack.

Instant Energy No-Bake Dark Chocolate Munchie Balls

Yields 15-20 sugar free desserts munchie balls

Ingredients

  • 1 cup almond butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons chia seeds
  • ½ cup unsweetened shredded coconut
  • 15 drops liquid stevia extract (preferably distilled water extract)
  • 1/3 cup ground flax seeds
  • 5 ounces of your favorite dark chocolate bar, melted

Instructions

  1. In a small sauce pan, melt the chocolate bar.
  2. In a large mixing bowl, mix the almond butter, vanilla extract, cinnamon, chia seeds, stevia, ground flax seeds (flax seed meal) and shredded coconut.
  3. Drizzle in the melted chocolate. Mix thoroughly.
  4. With a teaspoon, spoon out batter and form into small munchie balls. Place onto a plate. Cover with plastic wrap and place in refrigerator.
  5. Serve cold.

How to Vary This Recipe & Other Keto Desserts

  1. Break up the munchie balls into small pieces and serve on top of sugar free ice cream (low carb ice cream).
  2. For a special holiday meal where you serve a lot of different keto desserts and Paleo desserts, make three different batches, altering the type of nut butter you use. For example, make one batch with almond nut butter, another batch with macadamia nut butter, and another with pecan nut butter.
  3. Leave out the unsweetened shredded coconut from the recipe and instead roll the formed munchie balls into unsweetened shredded coconut. This will give a crunchier outside and offer more texture to the mouth feel.
  4. Split up the amount of almond butter in the recipe to 50% almond butter and 50% coconut cream concentrate. The coconut cream concentrate has a peanut butter type of consistency and it is quite sweet. You can also decrease the stevia and cut its amount in half.
