How to Make a Pie Crust for your Keto Desserts

 Using ingredients like almond flour, xanthan gum, eggs, salt, and grass-fed butter, you can create a keto friendly pie crust that tastes delicious. There’s only one rule—just as with making regular pie crust, you want to keep the butter very cold and the water very cold to create the best pie crust.

Keto Friendly Pie Crust Recipe

INGREDIENTS

  • 1 1/2 cups almond flour
  • 3 tbsp. Oat Fiber 500 (or 1/3 cup Sukrin Sesame Flour)
  • 1/4 tsp salt
  • 5 tbsp. unsalted butter, cold and cubed
  • 1 large egg white (mixed with 1 tsp water)

Preheat oven to 350 degrees F.
Now, chill your pie plate/pan

METHODS:

  1. Measure the dry ingredients into the bowl of a food processor and pulse to mix.
  2. Add in the cold butter and pulse in the food processer until you get a pea-sized crumbly mixture
  3. Drizzle the egg white around the bowl of the crust ingredients and pulse until the dough comes together in a ball.
  4. Remove the dough from the bowl and wrap in saran wrap. Refrigerate for 30 minutes to use today or you can keep it up to three days for a future pie!
  5. If baking it now, bake at 350 F for 30 minutes or until flaky and brown.

Double Chocolate Keto Pie Filling

—Yields filling for one 8 to 9 inch pie

Ingredients 

  • 16 ounces cream cheese, preferably Philadelphia Cream Cheese
  • 4 tablespoons butter
  • 4 tablespoons sour cream
  • ½ cup cocoa powder
  • ½ cup stevia and erythritol together (granule form)
  • 1 tablespoon vanilla extract
  • 1 cup coconut milk whipping cream (see our recipe for this)
  • 6 ounces chocolate bar, broken into pieces

Instructions 

  1. In a medium-sized bowl, add these ingredients: cream cheese, butter, vanilla, sour cream, cocoa powder, and stevia blend.
  2. Using your hand mixer, blend the ingredients.
  3. Next beat the batter on high until it is light and fluffy.
  4. Fold in 1/3 cup of Coconut Milk Whipped Cream into the medium-sized bowl containing the cream cheese mixture.
  5. Next add in the rest of the Coconut Milk Whipped Cream plus the broken pieces of chocolate. Mix gently. Do not over mix or overbeat.
  6. When mixed, put the filling into your pie crust. Smooth out the top of the pie.
  7. Refrigerate the pie after covering it with plastic wrap.
  8. Serve three hours later.

How To Vary This Recipe

  1. You could add chopped nuts to this chocolate filling and make it one of the best keto desserts you’ve ever tasted.
  2. Adding shredded coconut or coconut flakes in the top of this before serving will add an extra touch.

So I’ve spent some time on the best paleo desserts (keto desserts) and low carb desserts to develop southern versions that taste just like their sugar-containing partners. I think they taste better than sugary desserts now that I’ve lost my taste for all things refined—from flours to sugars. Once you get that taste for healthier foods, it stays with you for life.

Instead of blowing your keto diet completely for one craving, next time you’re craving a big bowl of chocolate ice cream, have some sugar free ice cream or low carb ice cream instead and stay in ketosis! Your body and psyche will thank you when the moment has passed and you are your strong self again!

Ingredients 

  • Paleo pie crust (recipe follows)
  • 1 stick grass fed butter, softened
  • 1-½ cups xylitol
  • 3 grass-fed eggs
  • 1 cup plain Greek yogurt
  • 2 teaspoons organic vanilla extract
  • ½ teaspoon xanthan gum
  • ½ teaspoon salt
  • ½ teaspoon cream of tartar
  • Dash nutmeg

Instructions

  1. Prep Paleo crust but wait to bake it. Set aside to fill later after make filling.
  2. Cream softened butter and sweetener until softened.
  3. Add eggs and mix with mixer until well blended.
  4. Add yogurt, vanilla, cream of tartar, salt, xanthan gum and blend until smooth.
  5. Pour into pie crust and top with dashes of nutmeg.
  6. Bake at 350 for 45 minutes, until top begins to brown and filling firms up.
  7. Allow to cool and then store in refrigerator.

Allow to set 2 hours in the fridge.

Low Carb Desserts 2: Paleo Pie Crust

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup arrowroot or tapioca flour, plus more for rolling out dough
  • 1/2 teaspoon finely ground sea salt
  • 1/2 cup cold butter, palm shortening or lard (very cold)
  • 1 egg
  • 1 egg white plus 1 teaspoon water to make egg wash

Directions

  1. Weigh and sift together the almond flour, coconut flour, tapioca flour and salt until combined.
  2. Using a food processor or pastry cutter, cut the cold butter, palm shortening or lard into the flour mixture until the size of small peas.
  3. Add the egg and pulse just until a dough begins to form.
  4. Form the dough into a ball, flatten into a disk, cover with plastic wrap and refrigerate for 20 minutes.
  5. Transfer the dough to a work surface covered with parchment paper that has been lightly floured with tapioca.
  6. Pat the dough into a ball and flatten it into a disk.
  7. Lightly dust the top of the disk with tapioca flour. Use another sheet of parchment paper to cover the dough as you roll it out into a round at least 12 inches in diameter and about 1/8 inch thick. Continue sprinkling tapioca to ensure the dough doesn’t stick to the paper.
  8. Carefully transfer the rolled-out dough to your chosen pan, using your fingers to repair any cracks.
  9. Make an egg wash by whisking the egg white with a teaspoon of water.
  10. Brush the edges of dough with the egg wash. You can also use the egg wash to help adhere any decorative cutouts to the edges of the pie dough.
  11. To partially or completely bake unfilled pastry, preheat the oven to 375 to 400°F.
  12. Bake for 15 to 18 minutes (10 to 12 minutes for partially baked shell).
  13. Let cool completely on a wire rack before filling.

Low Carb Desserts 3: Paleo Ambrosia

Ingredients

  • 1 package sugar free cherry gelatin
  • 3 cups chopped strawberries
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 6 ounces room temp. full fat organic cream cheese, cubed
  • 1 teaspoon stevia

Instructions

  1. Chill a bowl by placing it in the freezer for 5-15 minutes.
  2. In the chilled bowl, add heavy cream. Then use a hand mixer for 3-5 minutes until it becomes whipped cream and forms peaks.
  3. Add sweetener and vanilla and whip again.
  4. Add cream cheese and blend for another couple minutes until smooth (or mostly smooth).
  5. Gently fold in berries and the prepared gelatin.

Low Carb Desserts 4: Dr. Berg’s Amazing Sugar Free Pecan Pie

Ingredients

Crust (see Low Carb Pie Crust Recipe below)

Filling

  • 3 eggs, beaten
  • 1 cup powdered sweetener
  • 1 teaspoon Vanilla extract
  • 2 tablespoon melted butter
  • 1 cup Fiber Yum™ plus 1 Tbsp maple extract mixed well
  • 1½ cup pecan halves

Directions

  1. Beat eggs.
  2. Mix all ingredients except pecans with a beater. Beat until smooth.
  3. Add pecans and stir with spoon until blended.
  4. Pour into pie crust.
  5. Bake at 350Ffor 45 min.

Low Carb Desserts 5: No Carb Pie Crust

Ingredients

  • 1½ cup almond flour
  • ¼ teaspoon baking soda
  • 1-1/2 Tablespoons melted grass fed butter
  • ¼ teaspoon salt
  • 1 Organic egg
  • ¼ teaspoon vanilla
  • 1 Tablespoon powdered sweetener (if crust is being used for pie) Note: If for quiche, don’t add sweetener.)

Directions

  1. Mix all ingredients into food processor.  Mix until it balls up.
  2. Dump batter into pie crust and spread thin.
  3. Crust will thicken so you can press it quite thin around your pie plate.
  4. Bake 350F for 8-10 minutes.
  5. You can store this dessert a couple days in the refrigerator if you’re making it in advance.
