It’s in a few of my other low carb paleo dessert recipes, along with keto bomb dessert recipes. Sometimes I even add it to my sugar free ice cream recipe, which is a low carb ice cream.

Of course, I do realize that if you’re vegan, you aren’t going to like the addition of the gelation – but you can leave it out. I figured out a while back that gelatin is a lot similar to chia seeds and tapioca. It swells when it starts absorbing water that is nearby it. And that’s a good trait to have when you’re looking for a way to hold together the batters of different sugar free desserts recipes.

Gelatin should really be considered a superfood. It contains all the right substances for the joints, cartilage and bone to rebuild themselves. Whenever you have an injury, the tissues that were injured have to be rebuilt. And that’s where gelatin is pretty handy. When you get marrow bones from the grocery store and make soup out of them, you’ll see gelatin in the soup liquid.

Ingredients 

  • 1-1/3 cups coconut flour
  • 12 tablespoons butter (1-1/2 stick)
  • 2 large eggs
  • 3 tablespoons cream cheese
  • ¼ cup whipping cream
  • ¾ cup erythritol
  • 10 drops stevia liquid
  • 2 tablespoons beef gelatin powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • ½ teaspoon chocolate extract
  • Pinch of sea salt
  • ½ cup dark chocolate chips
  • 2 teaspoons baking powder

Instructions 

  1. Preheat oven to 350F.
  2. Melt the butter and cream cheese in a double boiler or in your microwave. It only takes about 20 seconds in the microwave.
  3. Transfer the butter / cream cheese mixture to a large bowl.
  4. Add eggs, whipping cream, stevia liquid, vanilla extract, chocolate extract and lemon extract. Stir to combine.
  5. In a medium-sized bowl, mix your coconut flour, erythritol, gelatin, baking powder, and the sea salt.
  6. Add about ½ cup of the dry ingredients to the wet. Then mix thoroughly.
  7. Add the remaining amount of the dry ingredients and mix thoroughly. Your batter is shaping up nicely by now.
  8. Next fold in half of the chocolate chips.
  9. Line your baking sheet with parchment paper.
  10. Scoop out about 1-1/2 tablespoons batter per cookie and place the batter on the baking sheet. The cookies won’t spread out so you can line them up close to each other.
  11. Press the remaining chocolate chips into each cookie.
  12. Bake at 350F until done, about 15 minutes.

Remove cookies from oven and cool on a cooling rack.

Ingredients 

  • 1 cup tahini
  • 8 tablespoons (1 stick) butter, softened
  • ½ teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric powder
  • 1 tablespoon maca powder
  • 4 drops stevia liquid
  • ¼ teaspoon rose hips
  • ¼ teaspoon black pepper
  • 1 teaspoon ground ginseng
  • ½ teaspoon ground ginger

Instructions 

  1. In a medium sized mixing bowl, beat butter with hand mixer for 2 minutes. What you want is a soft, creamy consistency, like you want with cookie batter when you cream the butter and sugar.
  2. Add tahini and rest of ingredients and mix again with hand mixer for 1 minute. You want a thick, creamy consistency so they’ll form into cookies.
  3. Place mixture into small compartments of ice cube tray that makes mini ice cubes or small round shapes.
