If they love tapioca pudding, the chances are great they will love this chocolate mint chia pudding and add it to their favorite keto desserts (Paleo desserts, too) recipes list.

If you love sugar free ice cream (low carb ice cream), it’s guaranteed that you will love this recipe, too.

Why Make the Chia Seed Pudding Paleo Desserts Anyway?

Chia seeds are one of the superfoods you’ll hear about. They’re foods from the Aztecs and Mayans that can be counted on to provide energy and calories that will sustain you during the day.

Chia seeds will give you good amounts of minerals if you eat an ounce of them. That’s equal to about 2 tablespoons. In fact, you can expect to get about 30% of your day’s requirement of manganese from chia seeds. This is important because the glyphoside chemicals sprayed on plants ends up depleting your body’s manganese levels.

Chia seeds aren’t especially high in calcium but the ounce that you eat of them can give you a good 18% of the daily requirement unless you are breast-feeding or pregnant. Then you need more calcium.

Chocolate Mint Chia Seed Pudding

Yield: 4 servings

 Ingredients

2 cups coconut milk, full fat
4 T unsweetened cocoa powder
2/3 cup chia seeds
2 tablespoons fresh mint leaves
¼ cup shredded coconut, unsweetened

Instructions 

  1. In a medium sized bowl, add the chia seeds and a cup of water. Let soak for a few hours, but preferably overnight. The seeds will swell up and look similar to tapioca pearls but form more of a gel.
  2. In your blender, blend the mint leaves with the coconut milk and cocoa powder.
  3. Pour into a large bowl and add the gelled chia seeds. Mix thoroughly.
  4. Cover the bowl with plastic wrap and then place in the refrigerator overnight.
  5. Then take out the bowl in the morning and blend it in a blender to smooth out the consistency. Dish out in small pudding bowls.
  6. Place a mint leaf on the top of each bowl. Sprinkle with shredded coconut.
