Yields 12 cookies

Ingredients 

  • 1 cup crunchy almond butter
  • 2/3 cup erythritol powder
  • 3 tablespoons cacao powder
  • 2 large eggs
  • 2 tablespoons butter, melted
  • 1 teaspoon baking soda
  • ¼ cup dark chocolate chips for baking (sugar-free)
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • ¼ cup raw almonds
  • Sea salt

Instructions

  1. Preheat oven to 350F.
  2. In a small mixing bowl, beat the eggs for 60 seconds, whipping plenty of air into them.
  3. In a large mixing bowl, combine the following ingredients: almond butter, melted butter, erythritol, cacao powder, water, vanilla extract, beaten eggs, and baking soda. Mix with a hand mixer for a few minutes, combining thoroughly.
  4. Next take your chocolate chips and fold them into the batter.
  5. Line a baking sheet with parchment paper.
  6. Then spoon out cookies by the tablespoon onto the baking sheet. Shape them into cookies by pressing them down. Press an almond into the top of each cookie.
  7. Sprinkle a little salt on top of each cookie.
  8. Bake at 350F for 10 minutes or until done.
  9. Remove cookies from oven and then allow to cool.

Instructions:

  1. Preheat oven to 350F.
  2. In a large bowl, mix together the flour, erythritol, salt, and spices.
  3. In a small bowl, mix together the eggs, butter, and vanilla extract.
  4. Take the small bowl and add its ingredients to the large bowl of dry ingredients. Using a hand mixer, beat until all ingredients are thoroughly mixed. You can expect the batter to be crumbly and somewhat stiff.
  5. Take out a tablespoon of dough and place it on a lined baking sheet. Form the cookie into a round shape.
  6. Bake at 350F for only 10-12 minutes depending on how hot your oven gets. They should be lightly browned.
