Keto Friendly Sugar-Free Birthday Cake & Low Carb Ice Cream

(Believe it or not, this yummy birthday cake has only FIVE net carbs!)

INGREDIENTS

 Cake 

  • 1 cup erythritol
  • 3/4 cup Butter (softened)
  • 8 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • 3 cups almond flour
  • 1/2 cup Coconut flour
  • 1 1/2 tablespoon Gluten-free baking powder

Cream Cheese Frosting

  • 32 oz Cream cheese, softened
  • 1/3 cup butter, softened
  • 2/3 cup Powdered erythritol (adjust to taste; regular granulated *not* recommended)
  • 1 teaspoon Vanilla extract 

Cream cheese frosting

  • 32 oz Cream cheese (softened)
  • 1/3 cup grass fed btter (softened)
  • 2/3 cup powdered erythritol (adjust to taste; regular granulated *not* recommended)
  • 1 teaspoon organic vanilla extract

 Directions

 For the cake

  1. Preheat oven to 350 degrees F and line a 9” springform pan with parchment paper.
  2. Beat erythritol and butter until creamy and fluffy.
  3. Add in the eggs, one at a time, then almond milk and vanilla.
  4. Add in dry ingredients and beat until creamy and pourable.
  5. Pour 1/3 of the batter into your lined pan and bang down to make even.
  6. Bake 18 to 22 minutes. Repeat to make three layers.

Frosting

  1. Beat together cream cheese, butter, erythritol and vanilla until smooth.

Assembly

    Let all layers cool completely to prevent crumbling

  1. Frost between the layers and stack, topping the top layer with frosting and lots of chopped pecans.
  2. Serve and enjoy!

Although xylitol tastes a lot like sugar, it has virtually no calories and lacks the bitter, strange aftertaste of other sweeteners. This is the reason why it is perfect for use on most low carb desserts and sugar free ice cream recipes.

Why is Xylitol so Healthy for Us? 

First, xylitol is healthy for the teeth because it starves bacteria in the mouth, depriving them of the fermentable sugars they need to survive.

In fact, using xylitol after meals helps to starve the bacteria that causes cavities, called Streptococcus mutans, causing over 73% of the bacteria to die off. Xylitol also helps create a more alkaline environment in the mouth, which prevents decay, gingivitis, dry mouth, and bad breath.

Even healthier, still, is what xylitol does to prevent diabetes. Only half the xylitol consumed is absorbed, meaning it has 0 effects on insulin or blood sugars.

In studies, animals fed products containing xylitol had better blood sugars, glucose tolerance, less weight gain, a lower waist circumference, lower food intake, and more weight loss than animals fed sugar. In all kinds of studies, researchers have found that xylitol is an ideal sweetener for diabetics—and anyone, trying to avoid diabetes as well!

Xylitol also strengthens teeth and bones. Xylitol helps to remineralize tooth enamel and increase bone density. Today, researchers are looking to xylitol as a hopeful treatment for osteoporosis.
