When you’re on a ketogenic diet or Paleo diet, the regular pie crusts won’t cut it any more. They’re made from flour–and that won’t work. IF you eat them, they will set your progress towards ketosis back a few days–minimally.

You need a good pie crust substitute when you’re making sugar free desserts in the pie category. The answer to this is actually pretty easy.

Simply grind up nuts, add a little flavor and sweetener and try it as a pie crust. You might like the flavor better. (I do – and occasionally if I sample a bite of a regular old style pie, when I taste the crust, I think to myself how unflavorful it really was.)

This cinnamon nut pie crust goes well with most Paleo desserts pie fillings or Keto desserts pie fillings. Cinnamon Nut Pie Crust

Yields one pie crust

Ingredients

½ cup ground almonds
½ cup ground walnuts
½ cup ground pecans
1 teaspoon cinnamon
2 tablespoons water
4 drops liquid stevia

Instructions

  1. Preheat the oven to 250F.
  2. Line an 8-inch pie pan with parchment paper.
  3. Mix the nuts, cinnamon and stevia in a medium-sized bowl.
  4. Then add water to moisten the nuts. If more water is needed, add it by only a tablespoon at a time. The consistency you are looking for is a moist nut meal that will press into a pie pan easily.
  5. Press the mixture into the pie pan, covering all areas.
  6. Bake at 250F for 25 minutes. Remove from oven.
  7. Let the pie crust cool completely.
  8. Then add your filling. Bake at regular oven temperature.

Notes:

  1. The reason why you’re baking the crust at a low temperature is to avoid overbaking. This is especially important when you are adding a filling that needs to be baked.
  2. When you remove the crust from the oven, it should be partially baked, not fully baked. The rest of the cooking time with the filling added will finish off the baking of the pie crust.
  3. Some cooks will take extra caution that the pie crust on the sides of the pan will not burn. To do this, they may decide to cover the edges of the pie pan with tinfoil. It’s an easy strategy to implement.

How to Vary Keto Bomb Dessert Recipes

  1. You could change the nut mixture in this recipe. Why not add brazil nuts and minus the pecans? Or use primarily walnuts with only ¼ cup almonds? Or add ¼ cup cashews and decrease the walnuts? Whatever your heart desires in the nut category, give it a whirl.

INGREDIENTS

 Cake 

  • 1 cup erythritol
  • 3/4 cup Butter (softened)
  • 8 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • 3 cups almond flour
  • 1/2 cup Coconut flour
  • 1 1/2 tablespoon Gluten-free baking powder

Cream Cheese Frosting

  • 32 oz Cream cheese, softened
  • 1/3 cup butter, softened
  • 2/3 cup Powdered erythritol (adjust to taste; regular granulated *not* recommended)
  • 1 teaspoon Vanilla extract 

Cream cheese frosting

  • 32 oz Cream cheese (softened)
  • 1/3 cup grass fed btter (softened)
  • 2/3 cup powdered erythritol (adjust to taste; regular granulated *not* recommended)
  • 1 teaspoon organic vanilla extract

 Directions

 For the cake

  1. Preheat oven to 350 degrees F and line a 9” springform pan with parchment paper.
  2. Beat erythritol and butter until creamy and fluffy.
  3. Add in the eggs, one at a time, then almond milk and vanilla.
  4. Add in dry ingredients and beat until creamy and pourable.
  5. Pour 1/3 of the batter into your lined pan and bang down to make even.
  6. Bake 18 to 22 minutes. Repeat to make three layers.

Frosting

  1. Beat together cream cheese, butter, erythritol and vanilla until smooth.

Assembly

    Let all layers cool completely to prevent crumbling

  1. Frost between the layers and stack, topping the top layer with frosting and lots of chopped pecans.
  2. Serve and enjoy!
