That’s why you should spend a little bit of extra time learning about the types of sugar substitutes that are used commonly in Paleo desserts (Keto desserts).

Once you know the basics, you can modify the sugar free desserts recipes you make to suit your sweet tooth. The same thing is true for sugar free ice cream and low carb ice cream.

The top four healthy sweeteners for Paleo desserts are Stevia, erythritol, monk fruit sweetener, and xylitol.

Common Sweeteners Used for Paleo Desserts

  1. Stevia

Since Stevia is a plant with sweet medicinal compounds in its leaves that have no calories whatsoever, it’s always okay to use it in any of your recipes, even those of sugar free ice cream.

Stevia is a rainforest herb found in Peru and some other tropical rainforests of the world. Its sweetness is up to 300 times sweeter than sugar, and that’s sweet enough for any paleo desserts you’re making.

This sugar substitute won’t affect your blood sugar levels either. And here’s another bonus – most of the erythritol is going to be absorbed before it ever gets to your large intestine.

You won’t want to use a lot of this type of sugar substitute because there is a point where your stomach can feel a little strange if you eat too much of it. However, that critical point is around 1 gram erythritol per every 2.2 pounds (a kilogram) you weigh.

If you weigh 150 pounds, you’re at 68 kg so you need less than 68 grams erythritol to stay away from stomach cramping.  Still, this is easy to do and most people don’t have a problem with it, even when it’s holiday time and they seem to be gorging on keto desserts more than ever.

The thing to keep in mind is that you can’t use much pumpkin puree.

It is a low carbohydrate food but ½ cup pumpkin puree does have 10 grams carbs. However, 10 grams spread over an entire recipe will only give between 1 and 2 grams carbohydrates per serving so you are quite safe.

Why should you even consider pumpkin when making your Paleo desserts and sugar free desserts? Because pumpkin is actually a super-healthy food!

Flourless Almond Butter Pumpkin Coconut Bars

–Yields 16 bars

Ingredients 

  • 3/4 cup salted almond butter
  • 2/3 cup pumpkin puree (canned pumpkin)
  • 1 large egg
  • 1/3 cup coconut cream concentrate (coconut manna)
  • 1/3 cup chia seeds
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2/3 cup unsweetened shredded coconut
  • 1/3 cup erythritol or 10 drops liquid stevia
  • 4 ounces of your favorite dark chocolate bar, broken up into pieces

Instructions 

  1. Preheat oven to 350F.
  2. Grease a 9-inch by 9-inch baking pan with coconut oil.
  3. In a large mixing bowl, mix together the almond butter, coconut cream concentrate, pumpkin puree, vanilla extract, chia seeds and egg with a hand mixer.
  4. Add the baking soda, cinnamon, ginger, nutmeg, cloves, erythritol or stevia, mixing thoroughly.
  5. Let sit at room temperature for about an hour, allowing the flavors to mix.
  6. Then add in half of the shredded coconut along with the chocolate pieces and mix. If batter is too wet, add ¼ cup hemp seed meal or flax seed meal.
  7. Pour batter into the greased baking pan.
  8. Add the remaining shredded coconut on top of the batter.
  9. Bake until golden brown, about 20-30 minutes.
  10. Remove from oven. Cool pan on top of cooling rack.
  11. Cut into squares. Top with low carb ice cream (sugar free ice cream) if desired.
