Paleo Desserts: Chocolate Mint Chia Pudding

Low Carb Desserts Keto

Chia seeds can make an unusual type of sugar free desserts but it’s one that will please even the most difficult of guests. If they love tapioca pudding, the chances are great they will love this chocolate mint chia pudding and add it to their favorite keto desserts (Paleo desserts, too) recipes list.

If you love sugar free ice cream (low carb ice cream), it’s guaranteed that you will love this recipe, too.

Why Make the Chia Seed Pudding Paleo Desserts Anyway?

Chia seeds are one of the superfoods you’ll hear about. They’re foods from the Aztecs and Mayans that can be counted on to provide energy and calories that will sustain you during the day.

Chia seeds will give you good amounts of minerals if you eat an ounce of them. That’s equal to about 2 tablespoons. In fact, you can expect to get about 30% of your day’s requirement of manganese from chia seeds. This is important because the glyphoside chemicals sprayed on plants ends up depleting your body’s manganese levels.

Chia seeds aren’t especially high in calcium but the ounce that you eat of them can give you a good 18% of the daily requirement unless you are breast-feeding or pregnant. Then you need more calcium.

Just one ounce of chia seeds gives you 11 grams fiber. That’s pretty good considering about 30 grams is considered a great fiber intake.

Chia seeds provide a good source of fat for your keto diet. Two tablespoons of them provide 9 grams fat.

They don’t contain any gluten, dairy, pork, wheat, or sugar. That’s why they are so perfect as an ingredient in sugar free desserts, keto desserts, Paleo desserts and even in sugar free ice cream recipes.

Chocolate Mint Chia Seed Pudding

Yield: 4 servings

 Ingredients

2 cups coconut milk, full fat
4 T unsweetened cocoa powder
2/3 cup chia seeds
2 tablespoons fresh mint leaves
¼ cup shredded coconut, unsweetened

Instructions

  1. In a medium sized bowl, add the chia seeds and a cup of water. Let soak for a few hours, but preferably overnight. The seeds will swell up and look similar to tapioca pearls but form more of a gel.
  2. In your blender, blend the mint leaves with the coconut milk and cocoa powder.
  3. Pour into a large bowl and add the gelled chia seeds. Mix thoroughly.
  4. Cover the bowl with plastic wrap and then place in the refrigerator overnight.
  5. Then take out the bowl in the morning and blend it in a blender to smooth out the consistency. Dish out in small pudding bowls.
  6. Place a mint leaf on the top of each bowl. Sprinkle with shredded coconut.

Benefits of Using Low Carb Paleo Dessert Recipes

In this Ginger Snap Coconut Cookie recipe, you’ll actually get some medicinal benefits from the ginger ingredient if you eat quite a few of them.

One of the primary effects of ginger is its anti-inflammatory effects.  Inflammation rages through the body because of the prostaglandin system. When certain prostaglandins are created in the body, lots of inflammation will be seen. But ginger inhibits the synthesis of prostaglandins that are connected with the inflammation system.

There is another way that inflammation can rage in the body: when certain cytokines are synthesized in high amounts. Some of those cytokines are called IL-1 (interleukin-1), TNF-alpha, and IL-8 (interleukin-8).

Ginger inhibits the synthesis of these three cytokines, and that’s part of the mechanism that this spice is so effective at busting inflammation.

But there’s more to how ginger works in the body. Did you know it also inhibits allergy reactions?

When ginger’s anti-inflammatory actions are working in the body, some people notice that their arthritis symptoms are a lot better. They don’t feel so much pain in their joints. The medicinal constituent called shogaol found in ginger is what is working to give them this effect. It’s a strong anti-inflammatory and antioxidant.

Now it’s time to try one of the best low carb Paleo dessert recipes in our collection.

Ginger Snap Coconut Cookies

  • 1 teaspoon vanilla extract
  • 2 teaspoons powdered ginger
  • 1/8 teaspoon stevia
  • Baking soda, one pinch

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, add the almond meal, coconut flour, shredded coconut, ginger, stevia and baking soda. Mix.
  3. In a separate smaller mixing bowl, beat the egg.
  4. Add the vanilla extract and ghee to the egg and mix.
  5. Mix the wet ingredients in with the dry ingredients. Combine to form a dough. Chill for 30 minutes.
  6. Remove dough from refrigerator and roll out to about 1/3 inch thickness.
  7. Make small cookies with your cookie cutters.
  8. Place the cookies on an ungreased cookie sheet. Bake until slightly browned, about 15-20 minutes depending on your oven.
  9. Cool cookies on a cooling rack.

Cookies and Ice Cream Go Together

Ever want to do ice cream calculations? Here are two that I love:

  1. Two gallons of ice cream per day equals 730 gallons a year. Wow, that’s a lot of ice cream. I hope in your case, it’s the sugar free desserts type of ice cream, you know, the sugar free ice cream like my new recipe, or a low carb ice cream.
  2. 9% of all milk produced in the US is made into ice cream. Too bad that milk desserts are not considered keto desserts or Paleo desserts. It’s best to follow low carb Paleo dessert recipes if you’re craving for something sweet.
