This recipe uses almond butter as the primary fat, which is a nutritious, fat-rich, protein rich food that will keep you full and energetic all day. Almonds are a great food, and studies have shown that as little as a handful of almonds eaten a day can lower blood cholesterol levels over time.

Almond butter has several uses in meals. Besides making No Butter Almond Brownies, you can use it in cupcake recipes, grain-free pancake recipes, drizzle it on top of low carb ice cream (sugar free ice cream), and simply eat it with a spoon when you need a burst of energy. Here’s one of the easy-to-follow low carb desserts you can enjoy any where.

No Butter Almond Brownies

Yields 1 pan brownies

Ingredients 

  • 1-1/2 cups almond butter
  • ¾ cup erythritol powder
  • 5 large eggs
  • ¾ cup unsweetened cocoa powder
  • ½ cup unsweetened shredded coconut
  • 1 teaspoon grain free baking powder
  • 1 teaspoon Himalayan or celtic salt

Instructions 

  1. Leave almond butter at rom temperature for a few hours before starting this recipe. Then shake the almond butter for 30 seconds to homogenize the fat with the almonds, which tends to separate.
  2. Next measure out the amount of almond butter you need, placing it in a large mixing bowl.
  3. Add the rest of the ingredients to the mixing bowl.
  4. Mix with a hand mixer for 4 minutes.
  5. Pour the mixture into a 9-inch by 9 inch baking pan, greased with coconut oil.
  6. Bake for 20-30 minutes at 350F. Test for appropriate amount of doneness. If you want more fudgy brownies, the toothpick will come out with batter on it. If you want more cakey brownies, the toothpick will come out clean. You determine the type of brownies; the cooking time is enough for both types of brownies to be sufficiently cooked.
  7. Remove from oven when done. Allow to cool for at least an hour before serving. Slice into appropriate serving sizes of these sugar free desserts.
  8. Top with sugar free ice cream.

How To Vary This Recipe & Other Low Carb Desserts

  1. There are a number of different nut butters on the market. You could substitute the almond butter for macadamia nut butter, pecan butter, peanut butter, cashew butter, or hazelnut butter. Remember though that cashew butter and peanut butter do contain carbohydrates and could exceed your carbohydrate intake for the day if you’re not careful. Pay attention to the labels when looking at nutrition info.
  2. Don’t be afraid to add a teaspoon or up to a tablespoon of a mineral powder such as kelp granules. It’s a good way to sneak in some extra nutrients into the diet. The taste is barely noticeable.
