  1. Stevia

INGREDIENTS

 Cake 

  • 1 cup erythritol
  • 3/4 cup Butter (softened)
  • 8 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • 3 cups almond flour
  • 1/2 cup Coconut flour
  • 1 1/2 tablespoon Gluten-free baking powder

Cream Cheese Frosting

  • 32 oz Cream cheese, softened
  • 1/3 cup butter, softened
  • 2/3 cup Powdered erythritol (adjust to taste; regular granulated *not* recommended)
  • 1 teaspoon Vanilla extract 

Cream cheese frosting

  • 32 oz Cream cheese (softened)
  • 1/3 cup grass fed btter (softened)
  • 2/3 cup powdered erythritol (adjust to taste; regular granulated *not* recommended)
  • 1 teaspoon organic vanilla extract

 Directions

 For the cake

  1. Preheat oven to 350 degrees F and line a 9” springform pan with parchment paper.
  2. Beat erythritol and butter until creamy and fluffy.
  3. Add in the eggs, one at a time, then almond milk and vanilla.
  4. Add in dry ingredients and beat until creamy and pourable.
  5. Pour 1/3 of the batter into your lined pan and bang down to make even.
  6. Bake 18 to 22 minutes. Repeat to make three layers.

Frosting

  1. Beat together cream cheese, butter, erythritol and vanilla until smooth.

Assembly

    Let all layers cool completely to prevent crumbling

  1. Frost between the layers and stack, topping the top layer with frosting and lots of chopped pecans.
  2. Serve and enjoy!
