The Glycemic index is a scale that tells you how much blood sugar rise you get from a food. It goes from 0 all the way up to 100. The higher up on the scale you get, the more that food is going to cause an insulin reaction and low blood sugar a few hours later.

A rating of 70 and higher on the glycemic index scale is a high glycemic index food. These are usually sugar-laden foods or GMO grain products. Some people are amazed to find out that even whole grains that are not GMO grains can contain far too many grams of carbohydrates in a serving and also be a high glycemic index food.

A food greater than 30 and up to 69 on the glycemic index scale is a moderately high GI food. Foods in this category are not allowed on a ketogenic diet or a Paleo diet.

The only foods that are even rated on the Glycemic Index are carbohydrate foods. Fat foods and protein foods are not rated because they don’t cause a rise in blood sugar levels. However, if a food contains some fat and some carbohydrates, it will have an associated glycemic index rating. The same thing is true for a food that is part protein and part carbohydrates.
