Breyers Carb Smart Ice Cream

You can’t overlook peanut brittle when you’re thinking about the low carb desserts (keto desserts and Paleo desserts) you’re going to incorporate into your diet. Peanut brittle is always something you can add to the top of any sugar free ice cream (any low carb ice cream), as it gives the ice cream the added texture difference that makes eating fun.

Nuts have a distinct place in the diet of most cultures – and for good reasons. Nuts provide a good source of calories, and they are generally an excellent source of fat. Your body needs fat to make hormones.

In fact, we are finding now that those who went on a low fat diet for several years end up with hormonal problems later on down the road. It’s odd that many people in their 20s and 30s are coming up with low testosterone or low estrogen levels (men and women respectively) but upon reviewing why this is happening, it’s easy to see a connection between eating a low fat diet and low levels of hormones.

Nuts also serve a purpose in lowering cholesterol levels. You might think that it’s impossible to eat a fat food and then have lower levels of cholesterol as a result, but it’s true. It all depends on the type of fat eaten. Either it’s a healthy fat food or it’s not. The unhealthy fat foods are the ones that raise the cholesterol levels.

There’s one other thing you should know about nuts that people always seem to get wrong. It’s that nuts are really not a good protein source. They’re a source of fat more than protein. The little 2-3 grams protein in nuts compared to the 7-9 grams fat pales in comparison. So don’t figure that you really don’t need much protein in your diet just because you are eating nuts and other fats. It doesn’t work like that.

Yields 6-8 servings

Ingredients

  • ¼ pound butter (8 tablespoons or 4 ounces or ½ cup)
  • ½ cup erythritol
  • 1 cup almonds
  • 1/2 cup peanuts
  • ½ teaspoon vanilla extract
  • Pinch of salt unless peanuts are already salted

Instructions

  1. Melt the butter either in a small saucepan. Use a low flame so you don’t burn it.
  2. Then add the erythritol and stir. Next turn the flame up to medium high. Stir constantly until the mixture hits boiling point.
  3. Get out your candy thermometer.
  4. Boil the butter-erythritol mixture on medium heat for about 10 minutes. You’re looking for the mixture to caramelize and turn a brownish color. You may have to turn the heat down so it doesn’t burn. You want the temperature of the mixture around 300F.
  5. Next take the pan off the burner and stir in the nuts.
  6. Add the vanilla extract.
  7. Line a baking sheet with parchment paper. Then use an olive oil spray or other oil spray to spray the parchment paper.
  8. Pour the nut brittle onto the baking sheet.
  9. Let it cool.
  10. When fully cooled, break into pieces.

Why You Need Sugar Free Desserts for Breakfast

Sugar Free Desserts Without Artificial Sweeteners

Have you ever heard of sugar-free desserts for breakfast? Breakfast dessert is a treat at the end of your first meal of the day that sets you up for a day of eating strategically.

The way it works is you add a dessert to the end of your first meal of the day, which counts into some of your carbohydrate allowance for that day. If it has, say, 8 net carbs and you’re allowing yourself 30 carbohydrates a day—you still have 22 carbs you can use to pack nutrient-dense vegetables into meal two, if you’re doing two meals a day, or meals two and three if you’re eating three meals a day.

Why Does Anyone Need Sugar Free Desserts at Breakfast

A keto friendly dessert at breakfast can set you up for a whole day of keto success. How? Well, you’ll get that craving for, say, dark chocolate and almonds knocked out with your first meal, erasing temptations for the day, so you can go about your day feeling happy and satiated.

It also gets your moves your sweet carbohydrates up to the first meal, leaving you all day to burn off calories should you be counting calories and carbohydrates.

It also fuels your fire with happy energy to go about your work and exercise with a really great attitude. You’ve earned those sugar-free desserts by hard work all week eating keto and intermittent fasting, after all!

What Qualifies as a Keto Friendly Dessert?

A keto friendly dessert is a keto dessert. It’s low enough in net carbs to not throw you out of ketosis – and a dessert only containing keto-friendly ingredients and sweeteners. Keto desserts are usually Paleo desserts, too.

  • Sugar free nut butters
  • Dark chocolate
  • Keto friendly sweeteners like xylitol, erythritol, and stevia
  • Coconut
  • Unsweetened cocoa
  • Grass fed butter, coconut oil, or olive oil
  • Nuts
  • Full fat heavy whipped cream
  • Low glycemic, low insulin index berries like blueberries, raspberries, strawberries, acai berries, and blackberries.

What are some great ideas for breakfast dessert?

There are all kinds of ways to enjoy a sweet treat at breakfast. You might want a keto friendly pancake breakfast with sugar-free syrup!

You might want a keto friendly banana nut muffin with full-fat cream cheese. You might want to enjoy a frothy keto friendly vanilla cappuccino with a big dollop of full fat whipped cream and dark chocolate sprinkles.

You might want a raspberry chocolate smoothie with a big bacon, cheese, and mushroom omelet. Or you might want to enjoy a big keto friendly chocolate brownie with a scoop of Kebby’s ice cream. Nobody’s saying dessert cannot BE the whole breakfast right?

What you want to do, of course, is make certain to focus on nutrient density every day as well. One doesn’t want to create nutritional deficiencies by eating a keto diet of only sweet treats of course.

Why Dessert is a Great Idea—Whatever the Meal

The great thing about the ketogenic diet is that it’s not about deprivation. Deprivation actually causes you to completely stall your weight loss progress by spiking fat storage stress hormones like cortisol. The ketogenic diet works because it is a high-satiety diet that keeps you full, unstressed, and happy so you can feel energetic, satisfied, sleep well, and enjoy your life more fully.
