Paleo Desserts: Chocolate Mint Chia Pudding

Low Carb Ice Cream by Kebbys

Chia seeds can make an unusual type of sugar free desserts but it’s one that will please even the most difficult of guests. If they love tapioca pudding, the chances are great they will love this chocolate mint chia pudding and add it to their favorite keto desserts (Paleo desserts, too) recipes list.

If you love sugar free ice cream (low carb ice cream), it’s guaranteed that you will love this recipe, too.

Why Make the Chia Seed Pudding Paleo Desserts Anyway?

Chia seeds are one of the superfoods you’ll hear about. They’re foods from the Aztecs and Mayans that can be counted on to provide energy and calories that will sustain you during the day.

Chia seeds will give you good amounts of minerals if you eat an ounce of them. That’s equal to about 2 tablespoons. In fact, you can expect to get about 30% of your day’s requirement of manganese from chia seeds. This is important because the glyphoside chemicals sprayed on plants ends up depleting your body’s manganese levels.

Chia seeds aren’t especially high in calcium but the ounce that you eat of them can give you a good 18% of the daily requirement unless you are breast-feeding or pregnant. Then you need more calcium.

Just one ounce of chia seeds gives you 11 grams fiber. That’s pretty good considering about 30 grams is considered a great fiber intake.

Chia seeds provide a good source of fat for your keto diet. Two tablespoons of them provide 9 grams fat.

They don’t contain any gluten, dairy, pork, wheat, or sugar. That’s why they are so perfect as an ingredient in sugar free desserts, keto desserts, Paleo desserts and even in sugar free ice cream recipes.

Low Carb Desserts: Flourless Almond Butter Pumpkin Coconut Bars

Low Carb Ice Cream Recipe

Making treats with pumpkin keto friendly is easy and tastes wonderful. In fact, sugar-free pumpkin desserts are some of my favorite. One way to prepare these is by combining almond butter with pumpkin. This is a winning combination for low carb desserts and of course keto desserts/paleo desserts. You might even consider adding almond butter and pumpkin to your sugar-free ice cream recipes (low carb ice cream).

The thing to keep in mind is that you can’t use much pumpkin puree.

It is a low carbohydrate food but ½ cup pumpkin puree does have 10 grams carbs. However, 10 grams spread over an entire recipe will only give between 1 and 2 grams carbohydrates per serving so you are quite safe.

Why should you even consider pumpkin when making your Paleo desserts and sugar free desserts? Because pumpkin is actually a super-healthy food!

Pumpkin is

  • Higher in beta carotene than carrots
  • Great for your vision, the antioxidants in pumpkin can neutralize free radicals that contribute to eye disorders such as macular degeneration
  • Works as a stool softener
  • Contains good amounts of dietary fiber
  • Linked with a reduction in cancer of the colon and prostate
  • Helps with blood sugar regulation
  • Boosts the immune system function
  • Good source of vitamin C
  • Contains potassium, vitamin B2, vitamin E, copper and the mineral manganese
  • Pumpkin seeds are good for the heart. They reduce cholesterol levels.
  • Pumpkin seeds are anti-parasitic. They can give incentives for different types of worms and parasites to leave your body.
  • Great for the skin
  • Pumpkin seeds are high in tryptophan which increases your body’s level of serotonin. Serotonin keeps you calm in the midst of stress.

See why adding just a bit of pumpkin in your low carb desserts or even in your sugar free ice cream would be a great idea?
