Paleo Desserts: Fudgy Nut Brownies To Die For

Kebby’s Low Carb Fresh vanilla ice cream

Brownies are one of those keto desserts / Paleo desserts that quickly bring you back to your childhood. Do you remember your mom making a batch that filled the whole house with that enticing chocolate scent?

Chocolate is actually good for you, helping to alleviate depression and boost mood. Dark chocolate is full of antioxidants and phytochemicals, and when you eat it, it stimulates the release of neurotransmitters such as dopamine and serotonin. These endorphins help us lower our stress levels and feel good, induce a happy euphoric feeling that banishes fat storing, cortisol-spiking stress. For this reason, dark chocolate is a great comfort food for more reasons than just taste!

And now that we have healthier sweeteners, you can enjoy them in sugar free desserts and stay in healthy ketosis. Of all the Paleo desserts and keto desserts recipes on our site, it’s the brownies that people get really excited about. I absolutely love them with Kebby’s Ice Cream.

Paleo Desserts Recipe Collection: To-Die-For Fudgy Nut Brownies

Yields 1 pan brownies (sugar free desserts)

Ingredients

  • ½ cup almond flour
  • 1 stick of butter (8 tablespoons)
  • 6 ounces of your favorite dark chocolate bar
  • 4 large eggs
  • ¾ cup erythritol
  • 1 teaspoon kelp granules (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder or cream of tartar
  • 2 ounces walnuts or almonds, ground
  • 1 pinch Himalayan salt

Instructions

  1. Preheat oven to 350.
  2. On the stove in a large sauce pan, slowly melt the chocolate and the butter. Mix thoroughly to remove lumps. Then turn off the burner and set the pan aside to cool.
  3. In a large mixing bowl, add the eggs, vanilla extract, erythritol and salt. Mix with a hand mixer for three minutes.
  4. In a medium sized mixing bowl, mix the almond flour with the banking powder. If you’re adding kelp granules, add it now. The kelp will provide extra minerals for all those who eat the brownies.
  5. Then add the almond flour mixture into the chocolate sauce pan that has cooled to room temperature.
  6. Add the egg mixture as well and stir to mix.
  7. Pour the mixture into a parchment-lined 9-inch by 9 inch baking pan.
  8. Take the ground walnuts and sprinkle them on top of the brownie pan.
  9. Bake at 350 for about 25 minutes. Test for doneness. If the brownies are more cakelike, a toothpick test will come out clean. If the brownies are more fudgy, then the toothpick test will show chocolate on the toothpick.
  10. After baking time is finished, remove the whole large brownie from the baking pan. Place on a cooling rack.
  11. Cut into small brownies and serve with chocolate mint sugar free ice cream for an extra endorphin surge.

I like walnuts on my ice cream and in my brownies. Recently, researchers began studying persons who ate more nuts, especially phytochemical-packed walnuts and pecans. Low Carb Desserts: Almond Peanut Brittle

Keto Cheesecake

You can’t overlook peanut brittle when you’re thinking about the low carb desserts (keto desserts and Paleo desserts) you’re going to incorporate into your diet. Peanut brittle is always something you can add to the top of any sugar free ice cream (any low carb ice cream), as it gives the ice cream the added texture difference that makes eating fun.

Nuts have a distinct place in the diet of most cultures – and for good reasons. Nuts provide a good source of calories, and they are generally an excellent source of fat. Your body needs fat to make hormones.

In fact, we are finding now that those who went on a low fat diet for several years end up with hormonal problems later on down the road. It’s odd that many people in their 20s and 30s are coming up with low testosterone or low estrogen levels (men and women respectively) but upon reviewing why this is happening, it’s easy to see a connection between eating a low fat diet and low levels of hormones.

Nuts also serve a purpose in lowering cholesterol levels. You might think that it’s impossible to eat a fat food and then have lower levels of cholesterol as a result, but it’s true. It all depends on the type of fat eaten. Either it’s a healthy fat food or it’s not. The unhealthy fat foods are the ones that raise the cholesterol levels.

There’s one other thing you should know about nuts that people always seem to get wrong. It’s that nuts are really not a good protein source. They’re a source of fat more than protein. The little 2-3 grams protein in nuts compared to the 7-9 grams fat pales in comparison. So don’t figure that you really don’t need much protein in your diet just because you are eating nuts and other fats. It doesn’t work like that.

Best Low Carb Desserts Choice: Almond Peanut Brittle

Try this and all our other low carb desserts and you’ll get to enjoy sweet treats without the guilt. This recipe is easy to follow. Enjoy it today!

Yields 6-8 servings

Ingredients

  • ¼ pound butter (8 tablespoons or 4 ounces or ½ cup)
  • ½ cup erythritol
  • 1 cup almonds
  • 1/2 cup peanuts
  • ½ teaspoon vanilla extract
  • Pinch of salt unless peanuts are already salted

Instructions

  1. Melt the butter either in a small saucepan. Use a low flame so you don’t burn it.
  2. Then add the erythritol and stir. Next turn the flame up to medium high. Stir constantly until the mixture hits boiling point.
  3. Get out your candy thermometer.
  4. Boil the butter-erythritol mixture on medium heat for about 10 minutes. You’re looking for the mixture to caramelize and turn a brownish color. You may have to turn the heat down so it doesn’t burn. You want the temperature of the mixture around 300F.
  5. Next take the pan off the burner and stir in the nuts.
  6. Add the vanilla extract.
  7. Line a baking sheet with parchment paper. Then use an olive oil spray or other oil spray to spray the parchment paper.
  8. Pour the nut brittle onto the baking sheet.
  9. Let it cool.
  10. When fully cooled, break into pieces.
