Low Carb Desserts: Almond Peanut Brittle

Low Carb Raw Carrot Cake with Cinnamon

You can’t overlook peanut brittle when you’re thinking about the low carb desserts (keto desserts and Paleo desserts) you’re going to incorporate into your diet. Peanut brittle is always something you can add to the top of any sugar free ice cream (any low carb ice cream), as it gives the ice cream the added texture difference that makes eating fun.

Nuts have a distinct place in the diet of most cultures – and for good reasons. Nuts provide a good source of calories, and they are generally an excellent source of fat. Your body needs fat to make hormones.

In fact, we are finding now that those who went on a low fat diet for several years end up with hormonal problems later on down the road. It’s odd that many people in their 20s and 30s are coming up with low testosterone or low estrogen levels (men and women respectively) but upon reviewing why this is happening, it’s easy to see a connection between eating a low fat diet and low levels of hormones.

Nuts also serve a purpose in lowering cholesterol levels. You might think that it’s impossible to eat a fat food and then have lower levels of cholesterol as a result, but it’s true. It all depends on the type of fat eaten. Either it’s a healthy fat food or it’s not. The unhealthy fat foods are the ones that raise the cholesterol levels.

There’s one other thing you should know about nuts that people always seem to get wrong. It’s that nuts are really not a good protein source. They’re a source of fat more than protein. The little 2-3 grams protein in nuts compared to the 7-9 grams fat pales in comparison. So don’t figure that you really don’t need much protein in your diet just because you are eating nuts and other fats. It doesn’t work like that.

Yields 6-8 servings

Ingredients

  • ¼ pound butter (8 tablespoons or 4 ounces or ½ cup)
  • ½ cup erythritol
  • 1 cup almonds
  • 1/2 cup peanuts
  • ½ teaspoon vanilla extract
  • Pinch of salt unless peanuts are already salted

Instructions

  1. Melt the butter either in a small saucepan. Use a low flame so you don’t burn it.
  2. Then add the erythritol and stir. Next turn the flame up to medium high. Stir constantly until the mixture hits boiling point.
  3. Get out your candy thermometer.
  4. Boil the butter-erythritol mixture on medium heat for about 10 minutes. You’re looking for the mixture to caramelize and turn a brownish color. You may have to turn the heat down so it doesn’t burn. You want the temperature of the mixture around 300F.
  5. Next take the pan off the burner and stir in the nuts.
  6. Add the vanilla extract.
  7. Line a baking sheet with parchment paper. Then use an olive oil spray or other oil spray to spray the parchment paper.
  8. Pour the nut brittle onto the baking sheet.
  9. Let it cool.
  10. When fully cooled, break into pieces.
