Yields one pie crust

Ingredients

½ cup ground almonds
½ cup ground walnuts
½ cup ground pecans
1 teaspoon cinnamon
2 tablespoons water
4 drops liquid stevia

Instructions

  1. Preheat the oven to 250F.
  2. Line an 8-inch pie pan with parchment paper.
  3. Mix the nuts, cinnamon and stevia in a medium-sized bowl.
  4. Then add water to moisten the nuts. If more water is needed, add it by only a tablespoon at a time. The consistency you are looking for is a moist nut meal that will press into a pie pan easily.
  5. Press the mixture into the pie pan, covering all areas.
  6. Bake at 250F for 25 minutes. Remove from oven.
  7. Let the pie crust cool completely.
  8. Then add your filling. Bake at regular oven temperature.

Notes:

  1. The reason why you’re baking the crust at a low temperature is to avoid overbaking. This is especially important when you are adding a filling that needs to be baked.
  2. When you remove the crust from the oven, it should be partially baked, not fully baked. The rest of the cooking time with the filling added will finish off the baking of the pie crust.
  3. Some cooks will take extra caution that the pie crust on the sides of the pan will not burn. To do this, they may decide to cover the edges of the pie pan with tinfoil. It’s an easy strategy to implement.
