I love southern food. So I’ve spent some time developing perfect imitations of my favorite Southern dishes and desserts. So I’ve spent some time on the best paleo desserts (keto desserts) and low carb desserts to develop southern versions that taste just like their sugar-containing partners. I think they taste better than sugary desserts now that I’ve lost my taste for all things refined—from flours to sugars. Once you get that taste for healthier foods, it stays with you for life.

Instead of blowing your keto diet completely for one craving, next time you’re craving a big bowl of chocolate ice cream, have some sugar free ice cream or low carb ice cream instead and stay in ketosis! Your body and psyche will thank you when the moment has passed and you are your strong self again!

These recipes here are my favorite low carb desserts on the planet. Hope you enjoy them!

Ingredients 

  • Paleo pie crust (recipe follows)
  • 1 stick grass fed butter, softened
  • 1-½ cups xylitol
  • 3 grass-fed eggs
  • 1 cup plain Greek yogurt
  • 2 teaspoons organic vanilla extract
  • ½ teaspoon xanthan gum
  • ½ teaspoon salt
  • ½ teaspoon cream of tartar
  • Dash nutmeg

Instructions

  1. Prep Paleo crust but wait to bake it. Set aside to fill later after make filling.
  2. Cream softened butter and sweetener until softened.
  3. Add eggs and mix with mixer until well blended.
  4. Add yogurt, vanilla, cream of tartar, salt, xanthan gum and blend until smooth.
  5. Pour into pie crust and top with dashes of nutmeg.
  6. Bake at 350 for 45 minutes, until top begins to brown and filling firms up.
  7. Allow to cool and then store in refrigerator.

Allow to set 2 hours in the fridge.

Low Carb Desserts 2: Paleo Pie Crust

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup arrowroot or tapioca flour, plus more for rolling out dough
  • 1/2 teaspoon finely ground sea salt
  • 1/2 cup cold butter, palm shortening or lard (very cold)
  • 1 egg
  • 1 egg white plus 1 teaspoon water to make egg wash

Directions

  1. Weigh and sift together the almond flour, coconut flour, tapioca flour and salt until combined.
  2. Using a food processor or pastry cutter, cut the cold butter, palm shortening or lard into the flour mixture until the size of small peas.
  3. Add the egg and pulse just until a dough begins to form.
  4. Form the dough into a ball, flatten into a disk, cover with plastic wrap and refrigerate for 20 minutes.
  5. Transfer the dough to a work surface covered with parchment paper that has been lightly floured with tapioca.
  6. Pat the dough into a ball and flatten it into a disk.
  7. Lightly dust the top of the disk with tapioca flour. Use another sheet of parchment paper to cover the dough as you roll it out into a round at least 12 inches in diameter and about 1/8 inch thick. Continue sprinkling tapioca to ensure the dough doesn’t stick to the paper.
  8. Carefully transfer the rolled-out dough to your chosen pan, using your fingers to repair any cracks.
  9. Make an egg wash by whisking the egg white with a teaspoon of water.
  10. Brush the edges of dough with the egg wash. You can also use the egg wash to help adhere any decorative cutouts to the edges of the pie dough.
  11. To partially or completely bake unfilled pastry, preheat the oven to 375 to 400°F.
  12. Bake for 15 to 18 minutes (10 to 12 minutes for partially baked shell).
  13. Let cool completely on a wire rack before filling.

Low Carb Desserts 3: Paleo Ambrosia

Ingredients

  • 1 package sugar free cherry gelatin
  • 3 cups chopped strawberries
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 6 ounces room temp. full fat organic cream cheese, cubed
  • 1 teaspoon stevia

Instructions

  1. Chill a bowl by placing it in the freezer for 5-15 minutes.
  2. In the chilled bowl, add heavy cream. Then use a hand mixer for 3-5 minutes until it becomes whipped cream and forms peaks.
  3. Add sweetener and vanilla and whip again.
  4. Add cream cheese and blend for another couple minutes until smooth (or mostly smooth).
  5. Gently fold in berries and the prepared gelatin.

Low Carb Desserts 4: Dr. Berg’s Amazing Sugar Free Pecan Pie

Ingredients

Crust (see Low Carb Pie Crust Recipe below)

Filling

  • 3 eggs, beaten
  • 1 cup powdered sweetener
  • 1 teaspoon Vanilla extract
  • 2 tablespoon melted butter
  • 1 cup Fiber Yum™ plus 1 Tbsp maple extract mixed well
  • 1½ cup pecan halves

Directions

  1. Beat eggs.
  2. Mix all ingredients except pecans with a beater. Beat until smooth.
  3. Add pecans and stir with spoon until blended.
  4. Pour into pie crust.
  5. Bake at 350Ffor 45 min.

Low Carb Desserts 5: No Carb Pie Crust

Ingredients

  • 1½ cup almond flour
  • ¼ teaspoon baking soda
  • 1-1/2 Tablespoons melted grass fed butter
  • ¼ teaspoon salt
  • 1 Organic egg
  • ¼ teaspoon vanilla
  • 1 Tablespoon powdered sweetener (if crust is being used for pie) Note: If for quiche, don’t add sweetener.)

Directions

  1. Mix all ingredients into food processor.  Mix until it balls up.
  2. Dump batter into pie crust and spread thin.
  3. Crust will thicken so you can press it quite thin around your pie plate.
  4. Bake 350F for 8-10 minutes.
  5. You can store this dessert a couple days in the refrigerator if you’re making it in advance.

Low Carb Ice Cream Keto

In Part 1, you learned that it’s possible to use erythritol and stevia as non-nutritive sweeteners for your sugar free desserts including sugar free ice cream. Of course, these two sugar substitutes are suitable for any keto/Paleo diet and thus even more suitable for Paleo desserts and keto desserts, which are pretty similar. Now you’ll get the scoop on monk fruit sweetener and xylitol.

Monk fruit sweetener

 Monk fruit is also called luo han guo. It’s known in Thailand and China as one of the fruits that bring on the fountain of youth.

Monk fruit sweetener is similar to stevia in that it’s about 300 times sweeter than sugar so your sweet tooth will be seriously satisfied after some low carb desserts that use it for its sweetening power.

The difference is that you won’t get any type of bitter aftertaste from monk fruit. (However, some stevia forms on the market have removed the bitter medicinal constituent . . .)

The monk fruit you buy should not contain added sugars of any kind. Remember that inulin is commonly added to commercial monk fruit products – and it does have a calorie count to it.

It’s especially important to check with the manufacturer about the ingredient list for monk fruit. They seem to sneak in sugar, molasses, or even Splenda to the ingredient list – and that’s of course a no-no for you and your keto desserts.

Xylitol for Keto Desserts

You have probably heard about xylitol by now. It’s another sugar alcohol on the market that is sweet and yet it offers some other benefits to health. For example, xylitol prevents your teeth from being attacked by bacteria that cause cavities. It’s also great for those who want their bone density to stay healthy.

There is something you should know about sugar alcohols though. They can cause diarrhea in the body and upset the GI tract if you eat too much of them. Remember the caution on the erythritol? The same caution applies here.

Consume a max of 40 grams xylitol a day to start out with and see how your GI tract manages. If it’s okay, then you can test the waters with an increase of 10 grams. See how you do. If you’re okay with that amount, push the limit to 60 grams xylitol a day. Otherwise, don’t make your low carb ice cream or keto desserts and Paleo desserts with much xylitol; use other substitutes.

Here’s another caution with using xylitol:  if you have a pooch that loves to eat everything you’re eating, you may want to bypass the use of xylitol whatsoever. Even though the sugar free desserts and low carb ice cream you make are great tasting, they can kill your dog. Xylitol and dogs just don’t mix and never will. Xylitol is only a bit sweeter than sugar so don’t expect waves of euphoria from sweetness satisfaction with keto desserts that you make with it.
