  • 3 cups almond flour

  • 2 medium sized eggs
  • 1-1/2 teaspoons vanilla extract
  • 1 tablespoon salt
  • 1 tablespoon ground ginger
  • 1/3 teaspoon ground nutmeg
  • 1/3 teaspoon ground cloves
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat oven to 350F.
  2. In a large bowl, mix together the flour, erythritol, salt, and spices.
  3. In a small bowl, mix together the eggs, butter, and vanilla extract.
  4. Take the small bowl and add its ingredients to the large bowl of dry ingredients. Using a hand mixer, beat until all ingredients are thoroughly mixed. You can expect the batter to be crumbly and somewhat stiff.
  5. Take out a tablespoon of dough and place it on a lined baking sheet. Form the cookie into a round shape.
  6. Bake at 350F for only 10-12 minutes depending on how hot your oven gets. They should be lightly browned.

Yum! I love a good mousse or pudding. So I made sure to put all my favorite recipes for vanilla, chocolate, and chia chocolate puddings. These are a surprisingly filling way to end a meal.

Sugar-free desserts like mousses and puddings give you something to look forward to and can help keep you on track when you feel like slipping. When you feel like you’re getting ready to go on an all-out carb-loaded doughnut binge that will throw you out of ketosis for a week to 10 days, try sugar-free desserts and Paleo desserts instead.

Instead of real ice cream, substitute sugar free ice cream or my new low carb ice cream called Kebby’s. It comes in heavenly flavors of chocolate and vanilla and viewers love it!

Sugar Free Desserts 1: Chocolate Mousse

Ingredients

  • 1 cup full fat, organic, grass-fed heavy whipping cream, chilled
  • 1 teaspoon unflavored gelatin
  • 1 teaspoon vanilla
  • 1 Tablespoon cold filtered water
  • 2 Tablespoon boiling water
  • 1/3 cup sugar free powdered sugar substitute (Just Like Sugar™)
  • 1/4 cup cocoa powder

Directions

  1. Add 1 cup of cold water and pour in gelatin powder.  Let stand for a minute. Then add boiling water and stir until completely dissolved.
  2. Stir all ingredients together and beat with a whisk, scraping sides and bottom to mix all well. Beat until stiff and peaks form a bit.
  3. Add gelatin and mix again to incorporate all ingredients. Spoon into small serving dishes.
  4. Top with sugar-free whipped cream. To make that, simply beat ½ cup heavy whipping cream (organic of course) and 3 drops stevia or to taste. Beat until stiff.

Sugar Free Desserts 2: Vanilla Cream Chia Pudding

You’ll love the sugar free desserts that we have here, particularly this one. Vanilla cream is perfect for those who are looking for an equally tasty alternative to chocolates.

Ingredients

30 oz sugar-free almond or organic coconut milk

½ cup chia seeds (can add more for a thicker texture)

¼ tsp vanilla cream stevia (or more if you like it sweeter)

You’ll also need a 1 Quart Mason Jar

Directions

  1. Pour milk into Mason jar, leaving about an inch of room at the top.
  2. Add stevia and chia seeds.
  3. Add lid and shake hard.
  4. Place the jar on its side on top of the counter or in the fridge for about 10 minutes. Shake again.
  5. Then put in fridge for a few hours to chill and thicken.
  6. Enjoy!

Sugar-Free Desserts 3: Chocolate Chia Pudding

Ingredients

30 oz sugar free almond milk or coconut milk

1 tablespoon organic cocoa powder (or go with less if you like a milkier chocolate taste)

½ cup chia seeds

¼ teaspoon chocolate stevia (The more cocoa, you use the more stevia you’ll need.)

You’ll also need a 1 Quart Mason Jar.

Directions

  1. Pour milk into a mason jar, leaving about an inch of room at the top.
  2. Add cocoa powder and stevia and shake hard to blend well. Add chia seeds and shake more.
  3. Leave in the fridge on its side with lid on firmly about 10 minutes.
  4. Shake again to prevent the cocoa from clumping.
  5. Chill several hours to thicken and enjoy!
