Paleo Desserts: Chocolate Mint Chia Pudding

Low Carb Sugar Free Ice Cream

Chia seeds can make an unusual type of sugar free desserts but it’s one that will please even the most difficult of guests. If they love tapioca pudding, the chances are great they will love this chocolate mint chia pudding and add it to their favorite keto desserts (Paleo desserts, too) recipes list.

If you love sugar free ice cream (low carb ice cream), it’s guaranteed that you will love this recipe, too.

Why Make the Chia Seed Pudding Paleo Desserts Anyway?

Chia seeds are one of the superfoods you’ll hear about. They’re foods from the Aztecs and Mayans that can be counted on to provide energy and calories that will sustain you during the day.

Chia seeds will give you good amounts of minerals if you eat an ounce of them. That’s equal to about 2 tablespoons. In fact, you can expect to get about 30% of your day’s requirement of manganese from chia seeds. This is important because the glyphoside chemicals sprayed on plants ends up depleting your body’s manganese levels.

Chia seeds aren’t especially high in calcium but the ounce that you eat of them can give you a good 18% of the daily requirement unless you are breast-feeding or pregnant. Then you need more calcium.

Just one ounce of chia seeds gives you 11 grams fiber. That’s pretty good considering about 30 grams is considered a great fiber intake.

Chia seeds provide a good source of fat for your keto diet. Two tablespoons of them provide 9 grams fat.

They don’t contain any gluten, dairy, pork, wheat, or sugar. That’s why they are so perfect as an ingredient in sugar free desserts, keto desserts, Paleo desserts and even in sugar free ice cream recipes.

  3. Pour into a large bowl and add the gelled chia seeds. Mix thoroughly.
  4. Cover the bowl with plastic wrap and then place in the refrigerator overnight.

Ginger Prevents Cancer

Did you know that ginger contains substances that prevent cancer? The active ingredients include ones called gingerols, shogaol, and paradol. These are the cancer busters according to scientists that run research studies on the topic.

In fact, there’s a long list of different types of cancer that ginger helps control. That list includes these cancers:  liver, skin, breast, pancreas, ovarian, prostate, stomach, and colorectal. The active ingredients in ginger stop the reproduction of cancer cells and cause the cancer cells to die.

Check out below how to make keto desserts that use ginger as the main ingredient.

Anti-Infection and Liver Protectant

That’s not all ginger is good for. Some studies show that ginger has anti-infective properties.

Other studies show that ginger could be useful in preventing liver injuries. That’s good, especially when someone is taking acetaminophen, which causes liver damage. Acetaminophen is taken when someone has pain.

Antioxidant Actions

Ginger also acts as an antioxidant that scavenges free radicals. This makes it important when someone has any type of degenerative diseases such as heart disease, diabetes, cancer, and neurological disorders.

Of course, aging is a process that occurs in the body when the free radicals take over. However, since ginger is such an excellent antioxidant, you can expect anti-aging benefits from it as well.

By the way, ginger’s antioxidant activities are proven in both lab tests and animal/human studies.

The most potent antioxidant in ginger is from the medicinal constituent called shogaol. Not only does it lower the free radicals from fat burning but it also increases other antioxidants in the body, plus glutathione. Ginger’s antioxidant power is equal to what’s found in vitamin C.
