Cinnamony Coconut Soft Cookies: One of the Best Paleo Desserts

Yields 2 dozen cookies

Ingredients 

  • 1-1/3 cups coconut flour
  • 12 tablespoons butter (1-1/2 stick)
  • 2 large eggs
  • 3 tablespoons cream cheese
  • ¼ cup heavy whipping cream
  • ¾ cup erythritol
  • 2 teaspoons ground cinnamon
  • 10-15 drops stevia liquid (to taste)
  • 2 tablespoons beef gelatin powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 2 teaspoons baking powder
  • 1/3 cup unsweetened shredded coconut

Instructions 

  1. Preheat oven to 350F.
  2. Melt the butter and cream cheese in a double boiler or in your microwave. It only takes about 20 seconds in the microwave.
  3. Transfer the butter / cream cheese mixture to a large bowl.
  4. Add eggs, heavy whipping cream, stevia liquid, and vanilla extract. Stir to combine.
  5. In a medium-sized bowl, mix your coconut flour, erythritol, ground cinnamon, gelatin, baking powder, and the sea salt.
  6. Add about ½ cup of the dry ingredients to the wet. Then mix thoroughly.
  7. Add the remaining amount of the dry ingredients and mix thoroughly until you reach cookie batter consistency.
  8. Line your baking sheet with parchment paper.
  9. Scoop out about 1-1/2 tablespoons batter per cookie and place the batter on the baking sheet. The cookies won’t spread out so you can line them up close to each other.
  10. Sprinkle shredded coconut on top of the cookies.
  11. Bake at 350F until done, about 15 minutes.
  12. Remove cookies from oven and cool on a cooling rack.

Here’s another caution with using xylitol:  if you have a pooch that loves to eat everything you’re eating, you may want to bypass the use of xylitol whatsoever.
