What are the Glycemic Indexes of The Sugar Substitutes for Keto Desserts?

Sugar Free Desserts Without Artificial Sweeteners

You probably know a little bit about the glycemic index (GI) if you’re on a keto diet or if you’ve been researching keto desserts, Paleo desserts, sugar free desserts, sugar free ice cream and low carb ice cream.

The Glycemic index is a scale that tells you how much blood sugar rise you get from a food. It goes from 0 all the way up to 100. The higher up on the scale you get, the more that food is going to cause an insulin reaction and low blood sugar a few hours later.

Scale Ratings

A rating of 70 and higher on the glycemic index scale is a high glycemic index food. These are usually sugar-laden foods or GMO grain products. Some people are amazed to find out that even whole grains that are not GMO grains can contain far too many grams of carbohydrates in a serving and also be a high glycemic index food.

A food greater than 30 and up to 69 on the glycemic index scale is a moderately high GI food. Foods in this category are not allowed on a ketogenic diet or a Paleo diet.

A food rated lower than 30 on the Glycemic Index scale is one that may be allowed in very small portions on a ketogenic diet.

The only foods that are even rated on the Glycemic Index are carbohydrate foods. Fat foods and protein foods are not rated because they don’t cause a rise in blood sugar levels. However, if a food contains some fat and some carbohydrates, it will have an associated glycemic index rating. The same thing is true for a food that is part protein and part carbohydrates.

If you’re on a keto diet or Paleo diet, you shouldn’t be getting a sugar rise from your foods. That’s because your carbohydrate intake is very, very low.

How to Eat Low GI Foods & Keto Desserts on a Keto Diet

By removing dairy products, many or most fruits, grains, and sugars of all sorts from your diet, you have only fats and proteins that are left. These make up the major portion of your diet. The non-starchy vegetables are very low in carbohydrates and never cause a significant rise in blood sugar levels.

The key to eating keto desserts and Paleo desserts is to make sure they don’t contain sugars. The sugars will throw off your diet. However, sugar free desserts that are also keto desserts won’t throw off your diet. These desserts, which may include low carb ice cream (usually a sugar free ice cream), would have a glycemic index rating of 0.

On the glycemic index scale, xylitol has a rating of 13. Erythritol is 0. Stevia is 0. And monk fruit is 0 if it has no other added sweeteners.  This means you can essentially use any of these sweeteners if you are diabetic and making keto desserts or low carb ice cream recipes.

Now you understand the basics of what the sweetener substitutes are. It’s time to successfully go on to make wise decisions in your low carb sugar free ice cream recipes and all other keto desserts or Paleo desserts for special occasions or even everyday sweet tooth delights.

Paleo desserts: Coconut Flour Soft Ginger Cookies

Banana chia yogurt pudding

I love finding out about the latest research on spices – and ginger is quite amazing. The more I find out about it, the more I want to include it in my Paleo desserts recipes (keto desserts), which are always sugar free desserts made with healthy sweeteners like xylitol.

And I notice a difference. Any area of my body that may be inflamed – maybe because I worked it out too hard at the gym or moved it in a weird way – will seem better when I consume ginger. In fact, often my wife will make a cup of ginger tea for me and have it waiting when I come home from work.

According to the University of Maryland Medical Center, ginger has been used to help digestion for more than 2000 years. It’s been used for colic, diarrhea, and even heart conditions. Women may know that ginger can make the pain of a menstrual period a lot less and may depend on it for feeling better during that time of the month.

Pregnant women who have severe vomiting can even benefit from ginger, reports the U of Maryland doctors. The women who consumed 1gram ginger daily for four days straight had a lot more vomiting relief than those who were stuck taking the placebo. In another study, the women who took the ginger had less nausea and did not vomit at all compared to those who got the placebo.

Ginger also works for those who are on chemotherapy and have nausea and vomiting. Hmmm . . .  so ginger cookies could conceivably help quite a few different types of people. Isn’t that exciting?

Coconut Flour Soft Ginger Cookies: A Favorite Among Many Paleo Desserts

Check out our fairly popular low carb paleo dessert recipes that include these soft ginger cookies. We’ll teach you how to make them along with many other types of paleo desserts. This recipe yields about 2 dozen cookies.

Ingredients

  • 1-1/3 cups coconut flour
  • 12 tablespoons butter (1-1/2 stick)
  • 2 large eggs
  • 3 tablespoons cream cheese
  • ¼ cup heavy whipping cream
  • ¾ cup erythritol
  • 2 teaspoons ground ginger
  • 10 drops stevia liquid
  • 2 tablespoons beef gelatin powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • Pinch of sea salt
  • 2 teaspoons baking powder

Instructions

  1. Preheat oven to 350F.
  2. Melt the butter and cream cheese in a double boiler or in your microwave. It only takes about 20 seconds in the microwave.
  3. Transfer the butter / cream cheese mixture to a large bowl.
  4. Add eggs, whipping cream, stevia liquid, vanilla extract, and lemon extract. Stir to combine.
  5. In a medium-sized bowl, mix your coconut flour, erythritol, ground ginger, gelatin, baking powder, and the sea salt.
  6. Add about ½ cup of the dry ingredients to the wet. Then mix thoroughly.
  7. Add the remaining amount of the dry ingredients and mix thoroughly. Your batter is shaping up nicely to look like cookie batter by now.
  8. Line your baking sheet with parchment paper.
  9. Scoop out about 1-1/2 tablespoons batter per cookie and place the batter on the baking sheet. The cookies won’t spread out so you can line them up close to each other.
  10. Bake at 350F until done, about 15 minutes.
  11. Remove cookies from oven and cool on a cooling rack.
